We love asparagus in our house and we are loving this asparagus season. We do freeze and can asparagus for use all-year round but pales in comparison to the fresh asparagus season. There are major limitations with what you can make with your preserved asparagus – you certainly can’t make this delicious recipe. But we only get this treat during this season when asparagus is $2 and under per pound. I have also been attempting to grow asparagus, but it takes a long time and it still wouldn’t make a difference for the off-season.
So, to make a long story short, we’ve been having asparagus nearly every night. We’ve made asparagus soup, stir-fry with asparagus, roasted asparagus with hollandaise, and a myriad of other recipes.
A couple of nights ago, our daughters were responsible for dinner. We all felt like we wanted a good, crunchy, veggie side. We’ve made gluten-free asparagus fries with our gluten-free flour. It’s decent, but not fantastic. The finer grains just do not coat, cook and crisp well enough for my tastes. So my girls had this brilliant idea to take a gluten-free bagel and pulse it in a blender (a food processor would work too) and make coarse crumbs to coat the asparagus with.
I was a bit skeptical as I had never minced a bagel, gluten-free or not, to smithereens in my life. But you know what…it actually worked and it worked beautifully and perfectly.
So we used the coarse crumbs to make asparagus fries and these were the most amazing, delicious, crunchy, crisp and delightful asparagus or fry morsels on the planet…and ones that I could have!! I didn’t feel like I was getting the “okay” or “this will do” food, but the REAL DEAL.
Let’s just say that these were devoured in seconds and a classically favorite chicken dish it was being served with seemed quite dull at that moment.
And the best news is that they do not need any dipping sauces, making for a lower calorie french fry too.
Here’s how to make Gluten-Free Asparagus Fries with Udi’s Gluten-Free Bagels.
Ingredients needed for Gluten-Free Asparagus Fries with Udi’s Gluten-Free Bagels
- 1 full bunch of asparagus
- 1 bagel
- 1 TBSP of garlic powder
- 1 TSP of salt
- 1 TBSP of Italian Seasoning (may I recommend our homemade Italian Seasoning Mix?)
- 1/3 cup of Parmesan Cheese (optional)
Directions for Gluten-Free Asparagus Fries with Udi’s Gluten-Free Bagels:
- Rip your bagel into a few chunks and toss it into your blender, food processor or Vitamix. You may have to rip in smaller chunks to start depending on the power behind your blender.
- Once your bagel is a good minced mess, it’s ready! You do want it to be coarse, not fine or super fine.
- In an 8×8 pan, mix the bread crumbs, garlic powder, salt and Italian seasoning together. Add Parmesan if desired.
- In a separate bowl, add 2 eggs.
- Then wash your asparagus and break off chewy ends.
- Dip each piece of asparagus in the egg and roll it around.
- Then roll it around in the bread crumbs.
- Add to a greased baking pan (you can use the 2-ingredient homemade cooking spray)
- Bake in the oven at 425 degrees for 8-15 minutes – the reason for the broad cooking time is that some asparagus are quite thin and some are quite thick! So cook until the breading is golden brown and they feel crunchy to the touch.
- Serve immediately and Enjoy!
