I make a lot of soup recipes that call for vegetable stock, so I’ve started making my own. I simply save all the peels, cores and ends from vegetables that would normally get tossed (nothing that is turning bad, though) in a gallon-sized zippered freezer bag. When the bag gets full, I just toss the contents into a large stockpot, cover with water and bring to a boil. Then I turn down the heat, cover and simmer for about 45 minutes. Finally, I strain it into freezer containers for use in my soups. I even sometimes use it in place of water or chicken broth, depending on the recipe. It adds a lot more flavor and is FREE! I love knowing that I’ve eked more out of every vegetable.

I can’t find the rinse for fresh vegetables and fruits. I’m thinking it is vinegar or lemon juice. Please help
