I love simple meals. Simple meals often mean that they are frugal and easy…and often healthier.
That’s why I wanted to share a simple dinner-in-a-bowl idea with you. Tuscany Chicken Bowl.
My family enjoys this dinner as they each get their “own bowl” and topping of choice. Plus, it’s quite filling and uses those delicious fresh tomatoes and greens. It also takes me around 10-15 minutes to prepare with hardly any effort.
All-in-all, it’s simply delicious!
Ingredients for Tuscany Chicken Bowl (per bowl)
- 2 Cups cooked pasta (we like the Ronzoni Ancient Grains pasta. It is $1 a box all of the time at our grocery store, plus coupons mean even less money)
- 1/2 Cup chopped mushrooms (or canned mushrooms)
- 1/2 Chicken breasts
- 3 Cherry tomatoes or sliced fresh tomato
- 1 Cup chopped arugula, spinach, kale or other leafy greens
- 3 Tbsps olive oil
- 1 Tbsp garlic powder
- Salt to taste
- Topping of choice (Italian Dressing, mushroom sauce, tomato based sauce, etc.)
Directions
- Boil the oil in a pan, place the chicken and sprinkle the garlic powder and salt.
- Cook for 3 minutes each side, cut into slices.
- You can also cook the chicken oil-free in a George Foreman grill.
- Transfer to a bowl with the pasta.
- Top with the tomatoes, mushrooms, and greens.
- Top with optional sauce/dressing
- Serve and enjoy.
Tips
Prepare a mushroom sauce to eat with the pasta with butter, onion, heavy cream, and mushrooms. Prepare an Italian dressing sauce with the homemade Italian Seasoning.
