Enjoy a super simple meal that is beautiful and delicious

  • 2 Cups cooked pasta (we like the Ronzoni Ancient Grains pasta. It is $1 a box all of the time at our grocery store, plus coupons mean even less money)
  • ½ Cup chopped mushrooms (or canned mushrooms)
  • ½ Chicken breasts
  • 3 Cherry tomatoes or sliced fresh tomato
  • 1 Cup chopped arugula, spinach, kale or other leafy greens
  • 3 Tbsps olive oil
  • 1 Tbsp garlic powder
  • Salt to taste
  • Topping of choice (Italian Dressing, mushroom sauce, tomato based sauce, etc.)
  1. Boil the oil in a pan, place the chicken and sprinkle the garlic powder and salt.
  2. Cook for 3 minutes each side, cut into slices.
  3. You can also cook the chicken oil-free in a George Foreman grill.
  4. Transfer to a bowl with the pasta.
  5. Top with the tomatoes, mushrooms, and greens.
  6. Top with optional sauce/dressing
  7. Serve and enjoy.
Prepare a mushroom sauce to eat with the pasta with butter, onion, heavy cream, and mushrooms. Prepare an Italian dressing sauce with the homemade Italian Seasoning.
