Recipe For Homemade Cafe’ Latte Popsicles (Recipes Made from Coffee)

Mmmm…coffee. Mmmmm iced coffee. Mmmmm iced coffee latte popsicles! Yes please!

It was 95 degrees today, 100 degrees yesterday…I don’t want a hot cup of coffee (althought I won’t turn it down), I want a cool refreshing treat that satisfies that coffee craving too.

Of course, it’s easy to make iced coffee (simply put on ice) or coffee ice cubes to add to iced coffee to make them an even cooler coffee drink, but what about a coffee dessert?

That’s what I am into these days! So far this summer, my kids and I have been working hard on projects of all kinds during the morning and playing in the afternoon. We enjoy a cool treat in the afternoon – homemade whole fruit treats for kids…but as much as I love fruit, coffee is a much more delightful iced treat for us busy partents. So I wanted to share the Cafe’ Latte Coffee Popsicles recipe with you in case you would like an adult ice treat on these warm summer days too!

And, as usual, they are much more frugal than buying them and they are easy to make too, just give yourself time for them to freeze!

Ingredients needed for Cafe’ Latte Coffee Popsicles:

  • 1c Whole milk
  • ½ c Whipping cream
  • ½ c Confectioners’ sugar
  • 2 tsp Vanilla
  • 2 Tbsp. Instant coffee
  • 4 Tbsp. Hot water or 4 TBSP of heated leftover coffee

Directions for Cafe’ Latte Coffee Popsicles: 

  • In a blender, mix the cream, whole milk, sugar and vanilla together.

  • Pour 3 – 4 Tablespoons of the mixture into the bottom of the Popsicle molds. Freeze until hard.

  • Dissolve the instant coffee into the hot water until smooth.

  • Add the coffee to the cream mixture and combine well.
  • When the popsicles have the bottom cream/milk portion frozen, add the remaining coffee mixture on top of the frozen cream/milk portion.

  • Cover with the plastic insert sticks that come with your mold, or, for a vintage touch, cover with foil paper, and pierce a small hole in the center of each popsicle.

  • Insert a wooden stick and place into the freezer until completely frozen, approximately 4 – 6 hours or overnight.

      I’m honestly not sure where I got mine. Probably Walmart or Amazon. 🙂 But you can find many options, including the dollar store. It really doesn’t matter where you get them or what type you use. I do see lots of great options on Amazon here: http://amzn.to/21iXh2w
