Aren’t these just adorable? I love Polar Bears and these are just too cute! I actually made these for my daughter’s 12th birthday. She LOVES animals and bears and she LOVES peppermint. That is her favorite flavor. So these were perfect. What makes these even more fun is the fact that they provide a “cooling” sensation from peppermint patties. It’s just really “cool.”
Another great thing is that these are really easy to make. I am going to show the “Sandra Lee Semi-Homemade” version, but you can use your own cupcake and frosting recipe. If you want to make them gluten-free, just make your favorite homemade cake mix with this Gluten-Free Flour recipe. I have found this to be the BEST GF flour because the results are just as fluffy and real and the real stuff. I searched for a couple of years for the best alternative.
In addition, you can also use the Girl Scout Cookie Thin Mints in place of the peppermint patties or even the Keebler Grasshopper Cookies. We love the York Peppermint Patties as it is a bit more “cooling” and minty, but those two options are also great and a bit more mild of a mint flavor.
Anyway, back to the adorable cupcakes at hand…or paw!
How to make Polar Bear Paw Cooling Cupcakes:
Ingredients:
- 1 box Chocolate Cake Mix (plus required eggs, oil and water as directed on box)
- White Frosting (your favorite homemade recipe or a 16 oz. store bought tub)
- 24 York Peppermint Patties (1 per cupcake)
- Chocolate covered raisins (3 per cupcake)
- 1.5 cups shredded coconut
Directions:
- Line muffin tin with 24 cupcake liners and set aside.
- Preheat oven and prepare cake mix according to box directions.
- Fill each cupcake liner two-thirds full with prepared cake mix. Bake as directed, then set aside to cool.
- Once cooled, slather each cupcake with a thick layer of white frosting.
- Add the shredded coconut to a small bowl. Dip each frosted cupcake into the shredded coconut so the tops are completely covered.
- Remove the wrappers from York Peppermint Patties, and add one to the bottom center of each cupcake – pressing down gently.
- Add three similarly sized chocolate covered raisins to each cupcake to create the toes.
- Add a little extra coconut in between the “toes” and around the edges if necessary.
