Lentil stew is a hearty, healthy, frugal, tasty dish that will please anyone. This one gives you two different options on how you would like to prepare!
A friend of mine used to say if she didn’t know what to make for dinner she would chop up an onion and through it in a pan with some butter and garlic. It was always a good start. Well that is exactly how this one starts.
Ingredients:
1 onion
4 cloves garlic
4 cups chicken broth
2 cups rinsed lentils
1 can diced tomatoes
2 10oz cans of chicken or 2 chicken breasts cooked and cubed.
Additional ingredients for a curried stew:
Add 1 1/2 Tbsp of curry
Additional ingredients for a savory herb version:
1 1/2 Tbsp Parsley
1 tsp chili powder
Up to 1 Tbsp of chicken bouillon
Place the chopped onion in a pot along with the garlic and a little bit of butter.Saute until golden and soft.
Add the chicken broth and rinsed lentils. I used red lentils. Next add the chicken and diced tomatoes.
Decide which version you want to make and add those seasonings (listed above). Bring water to a boil and simmer for 20 minutes or until the lentils are soft.
Finish your chosen stew with one of the following:
- Top the curried stew with a Pineapple Ginger Yogurt (recipe below)
- Top the savory herb version with plain Greek Yogurt or sour cream
Pineapple Ginger Yogurt Recipe
Ingredients:
1 cup plain Greek Yogurt
1 small can pineapple tidbits
1 1/2 Tbsp grated fresh ginger
Instructions:
Scoop the cup of yogurt into a bowl, drain the pineapple and add it to the yogurt. Grate some ginger and add that to the yogurt. Simply stir all together.
Put a scoop of your selected topping on your stew and enjoy!
