Homemade Lentil Stew Recipe
Amazing dish done 2-ways to please all. It is hearty, healthy, frugal and tasty and will be a favorite on your menu from now on.

  • Ingredients:
  • 1 onion
  • 4 cloves garlic
  • 4 cups chicken broth
  • 2 cups rinsed lentils
  • 1 can diced tomatoes
  • 2 10oz cans of chicken or 2 chicken breasts cooked and cubed.
Additional ingredients for a curried stew:
  • Add 1½ Tbsp of curry
Additional ingredients for a savory herb version:
  • 1½ Tbsp Parsley
  • 1 tsp chili powder
  • Up to 1 Tbsp of chicken bouillon
  1. Place the chopped onion in a pot along with the garlic and a little bit of butter. Saute until golden and soft. Add the chicken broth and rinsed lentils. I used red lentils. Next add the chicken and diced tomatoes.
  2. Decide which version you want to make and add those seasonings (listed above). Bring water to a boil and simmer for 20 minutes or until the lentils are soft.
  3. Finish your chosen stew with one of the following:
  4. Top the curried stew with a Pineapple Ginger Yogurt (recipe below)
  5. Top the savory herb version with plain Greek Yogurt or sour cream
Pineapple Ginger Yogurt Recipe. Ingredients:1 cup plain Greek Yogurt, 1 small can pineapple tidbits, 1½ Tbsp grated fresh ginger. Instructions: Scoop the cup of yogurt into a bowl, drain the pineapple and add it to the yogurt. Grate some ginger and add that to the yogurt. Simply stir all together. Put a scoop of your selected topping on your stew and enjoy!
