Homemade Pancake and Waffle Mix: Replace Store-Bought with Bulk Pre-Made Version

Stop buying Krusteaz or other store-bought versions of pancake and waffle mix.  It is so easy to make your own and have fluffy, yummy breakfast mixes available when you want and for a fraction of the price.

Plus, when you make it yourself, you can adjust ingredients to meet your health and dietary requirements.  We are going to share the base recipe that we have been using for several years as it we discovered it on Cooks.com back then.

We will also share modification ideas as well that we have used to meet dietary requirements!

This is a base recipe for both pancakes and waffles, and then each time we like to make something different with different fruit, chocolate and different mix-ins as well as a number of creative toppings!

We make this recipe that lasts us for a couple of months each time.  We store it in a large glass container (I think it is 50 oz.). We bought this glass container at Walmart. But in the past, we have reused a #10 can with a lid, reused Quaker Oats canisters and more.

We also made this for a bridal shower once where the theme was “filling the pantry” for the couple.  We made this and then put it in a plastic cereal container and printed the recipe and taped it to the container.  We coupled the gift with syrup.  It worked well!

Here’s how to make your base mix:

  • 10 c. all-purpose flour (3 lbs.)
  • 2 1/2 c. instant nonfat dry milk
  • 1/2 c. sugar
  • 1/4 c. baking power
  • 2 tbsp. salt

Combine all ingredients in a large bowl. Stir together to mix well. Put in a large airtight container. Label. Store in a cool, dry place. Use within 6 to 8 months. Makes about 13 cups of pancake mix. This mix works for both waffles and pancakes.

To make pancakes or waffles:

  • 2 c. homemade pancake mix
  • 1 c. water
  • 1 egg
  • 2 tbsp. oil (waffles – 3 tbsp.)

Beat smooth with a wire whisk or fork. This makes eight (4 inch) pancakes or four large waffles.

Modifications:

  • This mix works well with an all-purpose gluten-free flour mix.
  • Whole wheat flour is also a great way, but they won’t be quite as fluffy (but still yummy!)
  • At the time of preparation, you can also use milk instead of water to make them extra creamy.  You can also try making buttermilk by making your own butter or 1/2cup of plain yogurt and milk.

This does make very hearty pancakes and waffles.

Also, we recommend printing this recipe for both the pre-made mix and the mix and taping it to your container so that you will be able to keep your container full of pre-made mix and find our pancake/waffle recipe easily!

    Your print version of the recipe is missing the measure amounts for making pancakes or waffles. I thought maybe it was only 1 cup homemade mix, 1 T. of oil, but the recipe above states 2 .

    Thanks for this Homemade Pancake and Waffle Mix. I seldom buy instant mix, afraid too much harmful ingredients added in. I learn from Taiwan TV program to make Sausage Waffle !! It is really yummy and I often make them for lunch or dinner !! Use less sugar. Slice and fry big onions well, then add in sliced sausages and fry well, add in frozen mix veggie, season with salt and pepper and leave them to cool. At the end of mixing the waffle mixture, add in the fried ingredients. Make them into Waffle. I used 2/3 of flour and 1/3 is replaced by rice flour Or we can use only flour !! It is yummy and we love to eat it with some chilli sauce.

    I know it’s been a while since you’ve posted this recipe, but I had a question. I followed the directions for the base recipe, but when I make pancakes they turn out flat and have to rise to them. Is there something I can do to fix this?
