Healthy Taco Salad: Healthy Swaps, Gluten-Free and Thrifty Tricks

We are always on the look-out for healthy meals that are gluten-free and affordable! We share many recipes on our site for many ideas – but it is ones like these that are our favorite!

Well, Tacos or Mexican themed foods are very popular around our house as there are lots of gluten-free options and a great way to feed a lot of people.  We especially love our homemade taco seasoning mix as it has a great universal Mexican food taste!

Well, taco salads are at the top of our Mexican themed nights list and this is how we do it!

  • Use cabbage as the taco bowl! It works great, has a nice crunch like a hard shell, is healthy, goes a long way in feeding many! Both red or green work well, but we prefer red.
  • In addition, we take 1lb of hamburger and combine with 2 cups of cooked rice or 2 cups of beans, which “expands” the beef to be double the amount- saving both money and health.

  • Finally, we also use our homemade taco seasoning into the beef/rice/bean mixture. Here’s the recipe for the Homemade Taco Seasoning Mix.

  • Then we build a classic taco salad in the cabbage shell and our healthier/cheaper ground beef mixture!

It is a simple and tasty way to make a healthier switch! Cabbage is often cheaper than the taco bowls too, which is yet another reason to do this!
