It’s Saturday morning at our house over here – that means special breakfast time. Yes, pretty much the one-day a week that we are not in a mad rush to get everyone breakfast fast. So we can take a wee bit more time to make a breakfast treat. And this is truly a treat indeed.
But…I also make extras and freeze for extra breakfasts throughout the week. Whenever I am making waffles or pancakes of any kind, I always make extra for a “warm it up for 30 seconds and serve” kind of breakfast.
However, there is something special about freshly made hot fruit waffles with a dollop of nut butter – even better – chocolate nut butter like Nutella!
These are also perfect for those with food allergies – aside from nut allergies. And eating these waffles are an even more special treat for our family as our daughter use to be deadly allergic to nuts, but has recently been cured with modern medical treatments…and she is required to eat nuts on a daily basis. Please note: Nutella is not vegan or dairy free – it’s an addition you can add to these pancakes – but there are other chocolate hazelnut or other nut butters that would be both vegan and dairy-free. We are not intentionally trying to be dairy-free – so we add Nutella to ours.
This one is a high protein, almond flour waffle. A little different than the homemade mixes we shared before. This is not our regular waffle recipe as it does require almond flour – which is more expensive than the homemade GF flour mix. But again, this is where the special treat comes in.
We buy the almond flour in bulk at a local bulk food supplier. Costco and Sam’s Club are also decent resources. Finally, Amazon has a decent deal on Almond Flour HERE too.
And of course, you will want a good waffle maker for a good, thorough even bake!
Here’s the ingredients for Gluten, Dairy and Egg-Free blueberry waffles with Nutella:
- 2 ¼ Cups almond flour
- 1 ¾ Cups almond or coconut milk (you can use skim milk as well, but they would not be diary free then)
- 3 oz. maple syrup
- 1 Cup blueberries, chopped
- 2 Tsps vanilla extract
- ½ Cup Nutella (or any nut butter – but the chocolate is a special treat!)
- 2 Tsps baking powder
- Drizzle of chocolate syrup, to taste
How to make Gluten, Dairy and Egg-Free blueberry waffles with Nutella:
- Heat the waffle maker to medium heat.
- In a bowl, whisk together the flour, milk, maple syrup, vanilla, blueberries, and baking powder.
- Grease the waffle maker with some non-sticking cooking spray.
- Pour batter into waffle iron and cook for 5 minutes.
- Remove and divide into plates.
- Garnish with chocolate spread and chocolate syrup.
- Serve and enjoy.
*The batter can be made the night before and refrigerated.
