Can you believe the 2nd Friday in October has already come? Our weather is finally admitting this fact. Well, since it is Friday, it is time to celebrate here at The Thrifty Couple!

We were feeling hungry and discussing ideas for one of our favorite dishes in our house: Salads! We love to eat salads of all kinds, and we love to find new creative ways to top them or create them! So, we are pooling your fabulous ideas for the inspiration for the topic this week!
So, start thinking what your favorite salad toppings are so we can all get some new salad ideas! You can even be thinking of your favorite types of salads, mix-ins, dressings, recipes – anything related to salads. It doesn’t even have to be a green salad.
Just this week, we tried a new simple salad with our taco night this week: Corn and Black Bean Salad. We will share the recipe tomorrow when we announce the winner! This new salad might become a taco night tradition in our house as our eldest child said: “I love this salad, it tastes just like candy.” The result: the three younger kids’ ears were tuned in to her ultra convincing words and scarfed that salad down!
Wish we could make all salads taste like candy so every meal the salads get scarfed by all residing in this house and not just those with a driver’s license!

I love salads for dinner too. One thing that I recently threw in a green salad that I was surprised to like so much was Cilantro. Cilantro regularly finds its way into taco salads and other mexican and asian salads of ours, but this was just a basic green salad with carrots, tomatoes, cucumbers, lettuce and of course cilantro. It was really refreshing.
Another thing that I love to add to green salads is Jicama. It is sweet and crunchy and so yummy!

One of my favorite salads is broccolislaw, walnuts and cranberries, with a sour-cream and mayonnaise dressing. add just a touch of sugar to the dressing to make it great.

I love greens with chopped apples and mandarin oranges with sliced almonds and poppy seed dressing.
Another family favorite is greens, chopped barbecue dressing with black beans, corn, tomatoes, green onions and ranch dressing.

I love salad and I haven’t had one recently – why, I don’t know!! I need to get out and buy some stuff to make a yummy salad. I love raisins in a salad… mandarin oranges… apples… yum. That makes it sweet. Then maybe some slivered almonds, or chopped walnuts, or sunflower seeds.
Of course I also like the standard fare like tomatoes, cucumbers, mushrooms, carrots.
And I love the Ken’s Steakhouse Lite dressings, they are very yummy and very few calories!

I love to toast my own nuts. If you take a little butter and some brown sugar along with your favorite nuts and throw them in a pan on medium heat for a few minutes this makes a great addition to any salad. I also love to add fresh fruit to a salad (strawberries, raspberries and blueberries)….mmmmm might have to whip me up a salad soon!

There is a really yummy salad that I could eat every day. It has romaine lettuce, chopped apples, strawberries, cherry craisins, green onions, and candied slivered almonds. It is delicious!

I got this from a friend several years back… and it will make you eat your cauliflower I promise! Tell your kids..cauliflower can taste like candy as well! Super easy… Shredded lettuce, small cuts of cauliflower, bacon bits, green onions and croutons. Toss with dressing: (Make more if needed) 1/4 cup parmesean cheese, 1/4 cup sugar and 1/2 cup mayo. Mix and toss in salad. It does not sit for hours well, so eat fairly soon! It sounds odd, but very good!

Our family love a salad with tomatoes, onion, lettuce, carrots, and what ever else of a veggie you have on hand. Cut the veggies up very small. Then use Catalina dressing and the last but not least top with raisins and or dried cranberries. This is our kids favorite salad.
