Can you believe the 2nd Friday in October has already come? Our weather is finally admitting this fact. Well, since it is Friday, it is time to celebrate here at The Thrifty Couple!

We were feeling hungry and discussing ideas for one of our favorite dishes in our house: Salads! We love to eat salads of all kinds, and we love to find new creative ways to top them or create them! So, we are pooling your fabulous ideas for the inspiration for the topic this week!
So, start thinking what your favorite salad toppings are so we can all get some new salad ideas! You can even be thinking of your favorite types of salads, mix-ins, dressings, recipes – anything related to salads. It doesn’t even have to be a green salad.
Just this week, we tried a new simple salad with our taco night this week: Corn and Black Bean Salad. We will share the recipe tomorrow when we announce the winner! This new salad might become a taco night tradition in our house as our eldest child said: “I love this salad, it tastes just like candy.” The result: the three younger kids’ ears were tuned in to her ultra convincing words and scarfed that salad down!
Wish we could make all salads taste like candy so every meal the salads get scarfed by all residing in this house and not just those with a driver’s license!

I like to put sunflower seeds on top of my salad. I also make my own dressing sometimes, and I love it. It is minced garlic, olive oil, some brown mustard, lemon juice and pepper. I just shake it up and pour it over my salad.

I’m totally on a salad kick right now. My favorite is shredded lettuce (the bought kind not the kind that requires me to do work) with green olives, cottage cheese, a little ranch, a little french and if I had them I’d love to add dried cranberries or raisins. YUM!

We put just about anything on a salad: dried cranberries, mandarin oranges, any/all nuts (yum, pecans are my fav), apple chunks, pineapple (really, give it a try – we use tidbits!), feta cheese, bleu cheese, goat cheese – heck, CHEESE!, avocado chunks (slices are too big), garbanzo beans, cold corn, cold peas, sunflower seeds, etc etc etc!

I like to add chopped up dried figs and candied walnuts with some crumbled truffle infused cheese, (Sounds decadent but you can buy a small amount of the cheese for not very much.)

I love dried fruit on my salads. Cranberries are an absolute favorite. Although I’m not a fan of fresh fruit on salads. I also make my own tortilla strips by cutting up a tortilla and putting it in the oven (instead of frying, saves calories!)

My favorite salad has carrots, boiled eggs, pepperoni, dried cranberries, camalized pecans, sunflower seeds, and french dressing with a couple of pickles on the side. Each bite has something new!

My favorite salad, which is my go-to recipe for potlucks is a BLT Pasta Salad. For pasta I usually always use spiral noodles. Mix with the BLT and ranch. It is never exactly the same because I don’t measure anything, but I do usually use 1 full head of lettuce (after picking off the white leaves–we don’t eat that at our hose), 1 package of bacon. Mix it all up and sit it in the fridge until mealtime or party, we prefer it cold anyway!

I love to make what my family calls the kitchen sink salad. We put whatever is in the kitchen except the sink in it! Usually it has lettuce, grapes, cherry tomatoes, carrots, black and green olives, watermellon, cantelope, apples, oranges, blueberries, and whatever other fruit or veggie is in the kitchen. Top with bacon bits and either ranch or Italian dressing and it’s a sweet medally of flavor!

2 ideas:
On a regular green salad, toss on some pinto beans, pico de gallo, shredded cheese and a small amount of taco meat.
I buy the shredded broccoli and toss it with some Newman’s Sesame Ginger dressing and sunflower seeds.

Salad tip… make your own dressing and use less oil than vinegar. I use rice vinegar, sesame oil, sesame seeds, salt, pepper or cracked red pepper, a dash of soy sauce… and there’s a chinese chix salad dressing!
