I love breakfast! It’s my favorite meal to go out for…there is nothing like a cup o’ joe while waiting for my two eggs, over easy, crisp bacon, and hash brown potatoes with grilled onion! I my…I’m getting hungry!
Just this morning I got out my trusy non-stick fry pan, and sauted a variety of veggies including some onion, garlic, roasted red pepper and leftover baked potato. Use whatever you have on hand! To that I added some scrambled egg, leftover bacon, one cut up string cheese and fresh chopped basil. My seasonings included S&P and a bit of hot sauce. I let this set up with the lid on the saute pan for a few minutes.
The important thing is to use what you have on hand – and be creative! Both my husband and I loved the above creation… hmmm…what’s leftover in the fridge for tomorrow’s breakfast?!

A breakfast casserole in the Crockpot is not only a quick, easy and delicious breakfast, it’s also a great smell to wake up to.
lynn
Ooooo Kristin…I’d love to have a recipe for that! Would that be possible?

My breakfast tip is that I buy loaves of Texas Toast when it’s on clearance at Kroger for $ .50 a loaf, then I make the entire loaf into french toast. I package it 2 slices to a freezer bag then throw it in the freezer. That way all my teens have to do in the mornings is grab a bag and microwave it.

My boyfriend laughs when I first started doing this, but now he loves it…
I look for the BOGO free entree from out favorite breakfast spot in every other Tuesday newspaper. We stick to ordering just water. And I usually don’t eat all of my meal so I bring it home to eat for lunch!

Oh yeah, and I like you on facebook!!!

I buy eggs in bulk. I found 5 dozen eggs for $5 at the local Marianas and it will last us forever. And eggs can be used for other things besides breakfast 😉
Krystal
We use coupons to buy and store lots of Bisquick when it’s on sale for really cheap. We use it to make pancakes every Friday morning. It makes us feel special and starts our weekend off with a bang. And it doesn’t cost too much, especially when we use our own homemade jam instead of syrup. YUM!

I have the carnation instant breakfasts on hand for crazy mornings.

I LOVE the BOGO on cereal with a coupon. But the staple in our house for breakfast is oatmeal and when we have a special day we get oatmeal with sprinkles!

I use LOTS of Cheerios coupons! 🙂

I pack cereal in a tupperware and milk in a water bottle in the evening, so I can grab it as I head out the door in the morning. I eat at my desk at work, and having everything ready ahead of time keeps me from being tempted to stop and buy something on my drive in.
sasha
lots of 5 for 10 cerels and oatmeal

Breakfast is the most important part of the day!

I like to switch it up as often as possible. We can get into a cereal or toast rut and then the complaints start coming in. I try to make something fresh (muffins, french toast, pancakes, etc…) at least once per week.
Audra
I like to buy oatmeal from the bulk bins at the health food store and make up enough for the week then every day I reheat it adding different mix-ins so it doesnt get boring. My favorites are bananas, peaches, chocolate chips, almond butter and blueberries.
Shelli
I make my own baking mix and use like bisquick. I make several batches of pancakes at once and then freeze them. They are read to heat and eat, making it much less likely that we will grab somthing in town to eat or skip breakfast all together.

I have to say, during the week it’s just, sadly, cold cereal. Now and then I will toss on a pot of cream of wheat or oatmeal (both very cheap meals, btw!) but now that we live in the Southern climes – not so much (a hot breakfast was a bigger deal when we lived in the North).
On weekends: Saturday is free for all. Everyone is pretty much on their own. Sunday is the day I make a ‘big’ breakfast. Eggs, grits and sausage or pancakes/french toast/waffles. It’s usually cooks choice, but I take requests. 🙂

And, I am definitely a “liker”!

I love having baked goods available to pull out of the freezer. Right now there are waffles, muffins, and several kinds of bars ready at a moments notice.
alecia
I make homemade pancakes and waffles and freeze them.

I’m really into making healthy breakfast muffins right now. Everyone loved the zucchini chocolate chip recipe I tried from allrecipes.com. I’ve been gathering a lot of run ones to try. You can freeze them, eat them on the go, and it’s an easy way to slip in some healthy stuff. 🙂
Jennifer
We put the extra waffles or pancakes in the freezer so we can pull them out, pop them in the toaster and have a quick breakfast when we need to.
Also, I never pay more than $1 per box of cereal and we stick to the healthy ones so we’re thrifty and healthy.

When ever we make pancakes or waffles we quadruple the batch and then freeze them in amounts that would feed our family breakfast for about 2 days. We can then pull them out and have them when we like. Pancakes microwave quickly and waffles are reheated and crispy in the toaster. We make it healthy by using fresh ground whole wheat flour instead of white.
Brandy
Hmm… thrifty breakfast. Well, I buy yogurt and granola on sales and then eat that for breakfast along with whatever fruit is in season. Or in the case of winter in Chicago, dried fruit.

We stockpile our breakfast foods (Cheerios, Oatmeal) so we NEVER have to wake up in the morning and say “Oh Crud, we’re out!”

I make ahead breakfast burritos, wrap them in suran wrap and freeze them. Healthy, inexpensive and super yummy. Just throw one in the microwave to heat and you are good to go. I use potatoes, eggs, red peppers, bacon, and cheese and wrap it in a tortilla. MMMMMMM GOOD!!!!
Shauna
I like to mix things up so my kids aren’t eating cold cereal everyday. We have muffins, pancakes, waffles, toaster strudle and eggs every other day.

My husband grew up in a family where they had a general routine. Mondays: hot cereal; Tuesdays: something with syrup; Wednesdays: cold cereal; Thursdays: eggs; and Fridays: varied every week.
Because of that, his mom was able to make a good shopping list for breakfast foods. And, the kids knew that they were getting something good each day.

We use a lot of oatmeal – inexpensive and very good for us! We also do eggs and whole wheat toast sometimes; another thrifty and nutritious meal.

We love to have blueberry muffins, so we purchase them in bulk and then microwave and eat them warm.

I make big batchs of muffins on the weekend and stick them in the freezer. Then I just grab one, throw it in the microwave and go!

Eat a decent breakfast every day. Oatmeal with apples, dutch babies, french toast, waffles, or even a refreshing smoothie and a hard boiled egg! It’s cheap from scratch, healthy and delicious. A great habit!
