From The Thrifty Couple Kitchen: Island Spaghetti!

Here’s a thrifty recipe we wanted to share with you! We had Island Spaghetti on our menu for this evening! Pasta is a popular menu item in our home as it is one of the most affordable meals to make.  However, we like to experiment (as we have mentioned many times before) and so we like to mix things up with how to make some yummy pasta varieties so we don’t get bored with pastas! We had gotten fresh organic cilantro in our produce co-op basket this week and so we wanted to use it in our recipe!

Well, here is an idea for a refreshing twist on pasta, plus super easy: Island Spaghetti

What you need:

  • 1 box spaghetti
  • 1 jar Alfredo sauce
  • 1 can crushed tomatoes
  • A few sprigs of cilantro
  • A few stalks of sliced green onions

How to make:

  1. Cook pasta to package directions
  2. Drain and coat with a bit of  Safflower oil
  3. Mix your Alfredo sauce and can of crushed tomatoes and heat on stove top
  4. While the sauce is heating up, add the sprigs of chopped cilantro (to taste and remember that this is a stronger tasting herb) and the green onion slices.
  5. Heat until boiling
  6. Serve your pasta dish warm! Yummy!

We love to mix tomatoes with Alfredo sauce, it makes a very yummy and easy creamy red sauce.  Then by adding the cilantro and green onions, it gives this dish an incredible twist that reminds you of being on an island (thus the name we created). Just close your eyes as you take a bite and think of the picture above and then you are set!!!

We served this with the fresh organic Kale that we got from our produce co-op. Everyone loved the fresh steamed kale – even better than fresh steamed spinach! I guess I will need to look at the shelf price of Kale as it is a favorite now (unless we keep receiving them by chance in our produce co-op basket!).

Anyway, this meal was full of colorful flavors, cost very little and was so ridiculously easy to make! Thank goodness and perfect for a busy family on a tight budget!
