Easy Creamed Spinach Made with SOS Mix

We’ve mentioned numerous times how much our family loves spinach! We add fresh spinach to smoothies, steam and eat, put it on homemade pizzas, make numerous salads (with one of our favorites being fresh strawberries, craisins and raspberry vinaigrette with spinach), create dips with spinach – so many things! We love to buy it fresh, but we also go through it so quickly that we have mentioned that frozen spinach is a great value as it shrinks so significantly when cooked that the frozen is preshrunk and it would take quite a bit of fresh spinach to equal the frozen amount.

Either way, another favorite way to prepare is for Creamed Spinach and we are going to show you a cool and easy way to make it with the famed (on our site :)) SOS mix.

Remember that SOS mix stands for soup or sauce mix and is a very universal, healthier and easier alternative to canned creamed soups, sauces and gravies! You can catch up on many of the basic uses we have shared with SOS mix HERE and know that as a general rule, you can use it to replace any canned creamed soups in your recipes, which literally means it has thousands of uses!

So here’s the recipe for Creamed Spinach with SOS Mix.  This is a great recipe too as you can throw together this side dish in just a few minutes!

Creamed Spinach with SOS Mix

This is a rich, delicious and delicate veggie side dish that ends up being quite simple to throw together in just a few minutes.
Ingredients
  • 10 oz. of Fresh Spinach
  • 1 TBSP. of minced (fresh or already minced) garlic
  • ½ Medium Onion Diced
  • 1 Stick of Butter (8 TBSP)
  • 1 TBSP of Flour
  • ⅓ dry mix of SOS sauce (Recipe at: https://thethriftycouple.com/sos)
  • 1¼ Cup of Water
Instructions
  1. First, in a sauté pan, on medium heat, sauté the diced onion and minced garlic with 6 TBSP. of the butter.
  2. While that is sauteing, in a second sauce pan, melt the remaining 2 TBSP of butter in a sauce pan. Once melted, stir-in the 1 TBSP of flour until it soaks up the butter and makes a rue.
  3. Once the rue is present, then mix in ⅓ cup of SOS mix and 1¼ cup of water to the rue and cook on medium heat stirring often until it is mixed, bubbly and lump free, stirring often with a whisk.
  4. While you are waiting for the SOS mix to cook, in the first sauce pan, once the onions have a nicely caramelized from butter sauteing, add in the spinach and cook until it shrinks significantly and is cooked through. This only takes a couple of minutes. You may need to add the spinach a little by little as it may not all fit in the saute pan at one time.
  5. Once the spinach is cooked and the sauce is bubbly and lump free, mix it into the spinach.
  6. Serve warm and enjoy!
Notes
You will want to cook the sauce on medium to low and stir with a whisk often to prevent burning. It is milk based cream and so it will burn easily if cooked to fast or not stirred often enough. If you find it to be too creamy for your liking, you can always add more cooked spinach! More Recipe Ideas with SOS mix:
