Crushed Cookie Pudding Cups with Homemade Pudding Recipe

Today’s frugal recipe is one that looks amazing, tastes amazing and really gives no idea that this is a simple recipe with frugal ingredients – a dessert that looks and tastes more gourmet and expensive than it really is. It’s also great for a crowd, kids, adults and nearly any occasion. Who doesn’t love a new spin on cookies?

The recipe only requires a few minutes of hands-on time, but you will need to plan on at least 3 hours in total before serving as it does need to set in the fridge.

This is also made with homemade pudding. 

It’s not using the packaged pudding, but spending just a couple more minutes to whip up your own pudding. It’s a lot easier than you think and has an incredibly creamy and delectable taste!

How to make Crushed Cookie Pudding Cups

Here’s the ingredients for the Crushed Cookie Pudding Cups and How To Make Homemade Pudding

  • 2 Cups milk
  • ¼ Cup cornstarch
  • 3 Eggs
  • ½ Cup sugar
  • 1 Tsp ground cinnamon
  • ½ Cup caramel
  • 1 Cup crushed cookies (chocolate chip, sugar, etc.)
  • Regular whipped cream or chocolate whipped cream (recipe below) or chocolate frosting depending on how rich you want it.
  • 12 Samoa or Coconut Dreams cookies for the top

Directions

  • In a saucepan over medium heat, mix the milk, eggs, cornstarch, cinnamon, and sugar.
  • Stir until the first bubble appears.
  • Reduce to low heat, add the vanilla and half the crushed cookies, stir for 1 more minute.
  • Transfer to a bowl and take to the fridge for 2-4 hours.
  • When ready to serve, decorate glasses with the caramel, and pour the pudding into them.
  • Top with the remaining crushed cookies, a samoa/coconut dreams cookie, and whipped cream or frosting of choice.

Tips

If you are feeling extra indulgent, incorporate some chocolate chips to the mix.

For the chocolate cool whip, simply beat together 1 3.9oz. package of instant chocolate pudding with 1 cup of cold milk, 1/4 cup of powdered sugar and 1 8oz. tub of cool whip.
