I am so excited to share this next recipe with you! It’s a personal, secret, family, WOW favorite. It is completely and utterly amazing. Breakfast in a pumpkin is what we are going to share with you today!
This may just become a tradition in your family like it has been for ours. This is EASY, delicious, frugal and really fun. Everyone is just so mesmerized by the presentation and wowed by the taste.

Ingredients needed for Breakfast in a Pumpkin:
- 1 average size pie pumpkin
- 3 cups of oats (not quick oats)
- 3 cups of milk
- 1 tsp. pumpkin pie spice
- 1 cup packed brown sugar
- 1 cup of pecans
- 1/4 cup of Maple syrup
- 1/2 cup Craisins
How To Make Breakfast in a Pumpkin:
- Cut the top off the pumpkin
- Scoop out the seeds (and save the seeds from Pumpkin Pie Roasted Seeds)
- Set pumpkin aside
- In a separate bowl, mix the oats, pumpkin pie spice and brown sugar together.
- Then add the mix and blend
- Add the Craisins, pecans and Maple syrup into the mix
- Dump the oat mixture into the pumpkin
- Place filled pumpkin on a cookie sheet covered in foil
- Bake in a 400 degree oven for 60 minutes
- Serve warm by scooping out with a spoon and be sure to scrape the side to grab the baked pumpkin
- Enjoy!
