I love Waldorf Salad. One of the main reasons I love it so much is due to the memories behind it. You see, every Thanksgiving, Christmas or Easter that my grandparents, aunts, uncles and cousins on my dad’s side got together, grandpa would always bring his Waldorf Salad….every holiday meal.
And family meals, especially around the holidays, just evoke beautiful memories, smiling faces, good food and good times.
Waldorf Salad hasn’t changed much in the last couple of decades, until now! We have taken on a healthier lifestyle and trying to find ways to revamp favorite recipes to make them skinny or healthier.
So as we are approaching the holidays, as a way to remember my grandparents and the many years they were able to join us for these meals, we want to bring that tradition back, but with a new spin!
Skinny Honey Pumpkin Waldorf Salad
Yes, it sounds totally different, but it actually takes on much of the original flavors and tastes, but much lighter and more exciting with the ingredients we use and add. It is PERFECT for any time of the year, but we will certainly be gracing our holiday meals and tables with this salad this year as our family still gathers for our traditions.
This is such an amazing blend of flavors, proteins, fruits, veggies…. it has it all and has served as a wonderful addition to meals, but a stand-alone snack too. It’s completely satisfying and takes only 10-minutes to make = a perfect snack!
The key ingredient in this skinny recipe: Yoplait Greek 100 Honey Yogurt. Yes, this is the “secret” ingredient to make this new, revamped version AhMazing.
Plus, with the addition of Pumpkin Seeds (we use raw from Trader Joe’s), craisins and cinnamon, it brings together all of the fall and winter favorite flavors into one fabulous salad! There is also no cooking, just a bit of cutting and a bit of measuring – stir and serve…. so not to mention super easy.
Ingredients:
- Three 5.3oz. Yoplait Greek 100 Honey Flavor yogurt tubs (I got these at Walmart for $1 each)
- 2 Green Apples (I used Granny Smith)
- 2 Red Appes (I used Red Delicious)
- 1 cup of Walnuts
- 2/3 cup of pumpkin seeds (I used raw ones from Trader Joe’s)
- 2 Celery Stalks
- 1/2 cup of Craisins
- 1/2 – 1 tsp of ground cinnamon (depending on how much you love cinnamon)
- A squirt of lemon juice
How To Make Skinny Honey Pumpkin Waldorf Salad:
- Slice the apples
- Then dice them into about 1/2 inch pieces
- Dice the celery
- Add the diced apples/celery to the bowl, squirt just a little lemon over all and stir to blend.
- Then add walnuts, pumpkin seeds and Craisins and stir all together.
- Add the yogurt and cinnamon and stir until well blended!
- Keep cold until it’s time to eat and serve it up and enjoy!
