Skinny Honey Pumpkin Waldorf Salad Recipe

Ingredients
  • Three 5.3oz. Yoplait Greek 100 Honey Flavor yogurt tubs (I got these at Walmart for $1 each)
  • 2 Green Apples (I used Granny Smith)
  • 2 Red Appes (I used Red Delicious)
  • 1 cup of Walnuts
  • ⅔ cup of pumpkin seeds (I used raw ones from Trader Joe's)
  • 2 Celery Stalks
  • ½ cup of Craisins
  • ½ - 1 tsp of ground cinnamon (depending on how much you love cinnamon)
  • A squirt of lemon juice
Instructions
  1. Slice the apples and then dice them into about ½ inch pieces
  2. Dice the celery
  3. Add the diced apples/celery to the bowl, squirt just a little lemon over all and stir to blend.
  4. Then add walnuts, pumpkin seeds and Craisins and stir all together
  5. Add the yogurt and cinnamon and stir until well blended!
  6. Keep cold until it's time to eat and serve it up and enjoy!
