Skinny Honey Pumpkin Waldorf Salad Recipe
- Three 5.3oz. Yoplait Greek 100 Honey Flavor yogurt tubs (I got these at Walmart for $1 each)
- 2 Green Apples (I used Granny Smith)
- 2 Red Appes (I used Red Delicious)
- 1 cup of Walnuts
- ⅔ cup of pumpkin seeds (I used raw ones from Trader Joe's)
- 2 Celery Stalks
- ½ cup of Craisins
- ½ - 1 tsp of ground cinnamon (depending on how much you love cinnamon)
- A squirt of lemon juice
- Slice the apples and then dice them into about ½ inch pieces
- Dice the celery
- Add the diced apples/celery to the bowl, squirt just a little lemon over all and stir to blend.
- Then add walnuts, pumpkin seeds and Craisins and stir all together
- Add the yogurt and cinnamon and stir until well blended!
- Keep cold until it's time to eat and serve it up and enjoy!
