We love salad of all kinds, but we also LOVE Kale. We make all kinds of yummy things with Kale, plus our Kroger sister store (Smiths) sells bunches of organic kale for .99 everyday and they have for months – so it is always on our weekly shopping list.
Well, today we want to share with you a recipe for a Kale Super Salad that is quite affordable, goes a long way and is super yummy – it also has homemade poppyseed dressing. It is also easy and fast to make, which means it can be a quick addition to any meal. Feel free to add additional veggies to use up your veggies for the week too (again, we are big on no-wasted food – finding ways to use it all and save money!). Sweet peppers, zucchini, celery, carrots, cauliflower, etc. are all wonderful additions.
Ingredients for Kale Super Salad
- 2 cups chopped kale
- 3-4 florets broccoli, chopped
- 1⁄2 cup dried cranberries
- 1⁄4 cup roasted sunflower seeds
- 1 small apple, cored and chopped
Ingredients for the Homemade Creamy Poppy Seed Dressing:
- 1 Tbsp. granulated sugar
- 1 1⁄2 Tbsp. apple cider vinegar
- 2 Tbsp. mayonnaise
- 1 tsp. Dijon mustard
- 1 Tbsp. vegetable oil
- 1 tsp. poppy seeds
- Pinch of salt and pepper
Directions for Kale Super Salad and Homemade Creamy Poppy Seed Dressing:
- Make poppy seed dressing: Combine all ingredients in a small bowl or jar. Whisk or shake vigorously until combined and creamy. Refrigerate if not using right away.
- For the salad: Prepare greens. For the kale, remove leaves from stem. Chop kale leaves in to bite-sized pieces and scatter on a cutting board. Massage the kale for a minute or so, until it softens and darkens.
- Chop and dice all of the ingredients.
- Add kale to large bowl.
- Add the broccoli (For the broccoli, remove several florets and finely chop both the flower ends and the stalk).
- Add the dried cranberries and roasted sunflower seeds to the bowl.
- Add diced apples to the bowl.
- Drizzle some of the salad dressing over the salad and toss. Add more dressing as needed, until salad is moistened with dressing to your liking.
- Sprinkle a pinch of salt and pepper.
Yummy, affordable, quick, easy and healthy! It is a great addition to any meal on a budget!
