I don’t know about you, but I am craving Instant Pot Taco Beef Stew. It’s not chili, it’s not taco soup…. it’s Taco Beef Stew!
It is officially super cold. When it hits the 30’s, I am wanting to eat nothing but soups and stews for a week! This was that week! I imagine that we have snow coming soon.
That always gets me in the mood for stew. For lunch one day, I was going to make Classic Beef Stew. But as I was getting the ingredients out, I really started wanting something taco flavored. We all love the savoriness of taco seasoning. We “taco” a lot of things.
So my girls and I had an idea to “taco” our beef stew. Thus Taco Beef Stew was born. Even better is when you can throw all of the ingredients into an Instant Pot and let it do it’s job!
It’s not a lot different than classic beef stew, but we decided to add a can of corn, olives and tomatoes, along with the taco seasoning. That was pretty much the only difference.
Just for the record, this is the Instant Pot I have.
How to Make Instant Pot Taco Beef Stew
Ingredients needed for Instant Pot Taco Beef Stew:
- 1-2 lbs of stew beef
- 3 stalks of celery
- 2-3 carrots
- 3 medium potatoes
- 1 onion
- 1 can of kernel corn
- 1 can of tomatoes
- 1 small can of sliced olives
- 1 tsp of sugar
- 1 TBSP minced garlic
- 32 oz of broth – beef, chicken or vegetable
- 4 TBSP of homemade taco seasoning (or two envelopes of store bought)
- 2 TBSP of cornstarch (not pictured)
Directions for Instant Pot Taco Beef Stew:
- Begin by sprinkling about 1-2 TBSP of the taco seasoning on the stew meat
- Chop up all of the veggies
- Saute’ the onions and garlic with a bit of olive oil until the onions are soft and opaque on the saute’ setting on the Instant Pot
- Add the celery and carrots and saute’ for about 2-3 minutes
- Add the broth, then all of the other ingredients EXCEPT the olives
- Stir the pot
- Put the lid on and change the setting to “stew” with the air vent closed
- Let it cook and it will be about 35 minutes!
- After it is done cooking, flip the air vent to where it will vent
- Open the lid, stir it up and add the olives
- You can serve it just like this and it is DELISH
- or you can make it extra taco-y by adding cheese and chips on top!
If you don’t have an Instant Pot, you can adjust the recipe by sauteing the meat first and then add the onions, garlic, celery, carrots and then all of the other ingredients and simmer on the stove for about 30 minutes or until the potatoes are soft.
This recipe takes about 10-15 minutes of hand’s on time, but only about 45-50 minutes total. You can have a delicious dinner or lunch on the table without much effort!
