I get to share our next Instant Pot recipe with you: Instant Pot Breakfast Casserole!
The Instant Pot has seriously revolutionized our frugal, healthy eating plans. It has saved us so much money, so much time and made making homemade meals so much easier that it really is an appliance I cannot live without. I use to use my crockpot multiple times per week. I still use it here and there, but for the most part, the Instant Pot is running 4-6 days out of the week, sometimes multiple times per day.
We have learned and created so many recipes along with Instant Pot hacks and tricks for everyday cooking, that we have so much to share. Our Instant Pot list is quite large!
But we know that breakfast, especially hot breakfast, can be a challenge any time of year and so we wanted to share a breakfast casserole in the Instant Pot. We simply call it Instant Pot Breakfast Casserole.
We are going to share the “country style” Instant Pot Breakfast Casserole – which means it uses bread and thick cut ham (I think, if I am wrong about my cultural understanding of country style, let me know…. ;)). Even though we are sharing Country Style Instant Pot Breakfast Casserole, you can simply swap the meats, breads, and cheese, even adding vegetables, to make a breakfast casserole that fits your family’s tastes and preferences. But the basics of this recipe are there for you to adjust as needed.

In addition, often when I make this, it is different nearly every time. I am a sale, markdown and bulk shopper. I am not a shopper that shops according to recipes because it can get quite pricey to buy the exact ingredients for recipes. Thus, the reason why this is different every time. I love to add any veggies, meats or cheeses that I have on hand.
My family loves hot breakfasts and so this has been the perfect solution!
How to make Instant Pot Breakfast Casserole: Country Style
Ingredients needed for Instant Pot Breakfast Casserole:
- 1 loaf of sourdough bread, cut into 1 inch cubes
- 8 oz. Ham cut into 1/2 inch thick pieces
- 1 C shredded Mozzarela Cheese
- 4 Eggs
- 1 C whole milk
- 1 Tsp ground mustard
- 1/2 Tsp salt
- 1/8 Tsp pepper
Directions for Instant Pot Breakfast Casserole
Please note, you are going to mix the ingredients outside of the Instant Pot into a casserole dish. This is going to sit inside of the Instant Pot to bake.
- Grease the inside of your 1 1/2 qt round casserole dish with cooking spray.
- Chop the bread and set inside of your casserole dish
- Chop up the ham
- Sprinkle the chopped ham and cheese on top of the bread mixture
- In a separate bowl, beat eggs, milk, mustard, salt, and pepper in a medium bowl and pour over bread mixture.
- Add one cup of water to the bottom of your Instant Pot and set in the trivet.
- Cover your bread pudding with foil.
- Place your bread pudding on the trivet and set your Instant Pot to manual high pressure for 20 minutes (or 25 for a firmer bread pudding).
- When timer is up, allow for a 20 minute natural pressure release.
- Top with chopped green onions
How to make Instant Pot Breakfast Casserole with what you have on hand
Now that I have shared the basic recipe with you, there are alternatives to the ingredients above based on what you have on hand. You can seriously just be creative! Basically, anything you would put into an omelet would be perfect! We make omelets or this casserole towards the end of our grocery week to use up any final veggies we have left to minimize food waste (same with end of the week stir-frys and soups!).
So open your fridge and look to see what you have, but here are some additional ideas:
- Bacon
- Sausage links or crumbles
- Lunch meats
- Left over chicken, beef or steak
- Bell peppers
- Celery
- Greens like spinach, kale, basil, arugula, cilantro, parsley, etc.
- Cheese of any kind – but we also love feta/goat cheese!
- Cabbage
- Onions of any kind
- Potatoes or hash browns
- Any old breads like french, bagels, or even leftover heels
Please note, if you are using veggies, we would recommend a light saute’ on them before adding to the casserole.
