Check out this really easy way to make a healthy and often distasted veggie. I actually love broccoli in any form! It is a super food and so incredibly healthy for you, your body and your health. Plus it is often an affordable hearty veggie.
Well, after trying to find creative ways to get me family to eat it up… I now have the perfect solution! Roasted Broccoli!
This is really, really good, easy to make and filled with nothing but healthy! You cannot go wrong.
When I made it the first time, my family ate up and Alex, who really doesn’t like broccoli but will shove it down his throat because I give him the threatening eye at dinner when I am trying to convince the kids to eat it, literally gobbled it up and said that it is the best broccoli he has ever had in his life!
The best part is (other than the health benefits and ease in making) that it is a different consistency than any broccoli I have ever prepared. It comes out a bit “crunchy” which adds a dimension of flavor and eating experience that makes it incredibly enjoyable, which is one big factor that Alex loved!

Here’s how to make this super simplistic, delectable, healthy side dish! This is also one of those recipes that will work with any diet!
Ingredients:
- fresh broccoli (frozen would probably work, but I don’t think you would get quite the same consistency)
- olive oil
- pepper
- salt
- garlic
To make:
- Simply wash and cut the broccoli to bite size pieces
If you look close – you can see me waving at you 🙂
- Then put the broccoli in a bowl and pour olive oil over and stir until well coated
- Then add salt and pepper to taste
- Then add minced garlic (I often have fresh, but to save time and include even more flavor, I have the fresh minced jars from the produce department. They are very large jars for around $5 and they last me forever!)
- Stir it all up until well coated and even spices distribution
- Spray a cake pan with non-stick cooking spray and spread out your broccoli mixture evenly
- Then pop in the oven on 400 degrees for about 15 minutes until the tips of the broccoli start turning a nice dark golden brown. The rest of the broccoli will crisp, but not turn dark! You can “roast” it for more or less time depending on how crisp you want it.
- Serve it up and enjoy!
This dish takes me less than 5 minutes to throw together and so I can add it in last minute when I realize I want a healthy side with dinner 🙂

The broccoli sounds yummy. One of our favorite veggies. But—how long can you keep the jarred garlic? I’ve always been afraid to use it for fear of it going slimy or rancid. You said it lasts you forever. How long is “forever”? 🙂 🙂

Hi Linda, There are no specific amounts – just whatever will coat your amount of broccoli that you are preparing for that meal (which is different for us everytime based on how much broccoli I have). Also, we LOVE tons of garlic, so I am afraid if I put a specific amount, others will try it and disagree entirely – LOL. So just put in whatever amount you desire. The recipe will print just as it appears on the page (with no amounts since I didn’t include any). Again, the print button is in the top right of the actual recipe box. With the words that say “Print.” Hopefully that clears it up.

I love doing this with broccoli, and the teenager even specifically requests it! The only difference is that I haven’t added the garlic (will next time, though!) and when I pull it out of the oven, I squeeze a little bit of fresh lemon juice over it. YUM!

Roasted broccoli is by far my FAVORITE way to eat broccoli. All veggies are better roasted. Have you tried roasted brussel sprouts? AMAZING!
