For the past many months, many of you have sent us emails asking about our Grits Casserole that we have put on our personal weekly No-Food Waste Menu Planner that we share with you as you wanted the recipe.
I kept meaning to take a picture to post with the recipe (because who really wants to read a recipe without the pictures :)) and I finally remembered before it was hammered with serving spoons and forks and didn’t look to pretty anymore.
This is a favorite breakfast right along with Savory Brown Rice Breakfast. My family loves and begs for this! It is naturally gluten-free, as long as you buy gluten-free grits!
- Again, we buy our grits in bulk 5o lb. bags (see the post here on how we store for freshness and safety) and can buy it for $20-$25 a bag and it makes many, many delicious things, including cornbread!
- Well, we also use our natural bulk sausage that we show from Costco HERE to make it really cheap and easy on you.
- You can also use fresh, or even your frozen eggs for this!
- Fresh grated or frozen cheese works too!
I mention the above things because almost every time we make it, all of the ingredients have been in their bulk/thrifty form because this is what saves us the most money!
So now on with the recipe!
The ingredients you will need are:
- 1 lb. or 1 package of your own pre-cooked ground sausage or even bacon crumbles or ham cubes
- 1 cup of cheese of any type (sharp tastes best)
- 1.5 cups of Grits
- 5 cups of water
- 5 beaten eggs
- 1/2 cup of milk
- Dashes of Salt, Pepper, Turmeric and Cayenne and/or dash of Frank’s Red Hot Sauce
- We will also sometimes add diced onion
Here’s how to make it:
- Pre-heat the oven to 375 degrees
- Prepare grits on the stove top like normal by bringing to a boil with the 5 cups of water and then cook until water is absorbed. Store-bought instant grits take just a few minutes, our bulk dry ones takes about 20 minutes.
- Cook your sausage or defrost your frozen cooked sausage
- Then combine all of the other ingredients into a bowl and stir-together
- Once the grits are done, add the sausage and other ingredients into the pan and stir together
- Then pour into a greased casserole dish and bake at 375 for about 30 minutes.
- The top will get crispy, but the inside will stay soft.
- Optional: you can add extra cheese on the top the last 5 minutes of baking!
- Best served warm, but it also stores and reheats in the microwave well too (it will just be more dry)

My Sis-in-law puts her grits in a crockpot overnight. She says that next morning, the grits, are ready and delicious. They have 6 hungry children to feed. This saves lots of time on those cold mornings.. 🙂
