A couple of weeks ago, we told you about a new project that we are taking on. Our new healthy living website… Live.Health.Run.com. It is really a crazy step for us because a complete lifestyle change has taken place in our home. First, several years ago, healthier eating became a priority. We have shared MANY tips/articles and more on how we eat healthier on a budget.
The things we love most to eat are a lot healthier fats (nuts, eggs, avocados, coconut oil), lots of leafy greens and other veggies (sweet potatoes have become a staple instead of white potatoes), whole grains and fresh fruit. We also primarily eat lean proteins such as our chicken and salmon from Zaycon. We do have beef on occasion, but Alex was a total steak and potatoes guy…but not any more. 🙂
I do make some of our own breads, but we go through it so quickly that it is hard to keep up and so in this process,we wanted to find a bread that was not enriched and had less carbohydrates than most. We shortly found a favorite bread – Oroweat Healthfull Bread.
We have been buying 2 different kinds – the Flax and Sunflower or Steel Cut Oats and Honey.
See how much better these breads are compared to what you normally eat by checking out these labels. We love the fact that they are healthy, but lower in carbohydrates. It is difficult to cut out bread. I personally just miss it too much!
The Flax and Sunflower Bread
The Steel Cut Oats and Honey Bread
Along with showing you what’s in this bread (only 15 carbs..Yipee!), we want to share one of our favorite recipes that incorporates many of the healthy things we love!
Poached Egg and Avocado Open-face Sandwich! This is so amazing! It tastes great, is super healthy for you and works as a breakfast, lunch or dinner. We typically enjoy it at lunch with a nice green salad drizzled with balsamic vinagrette and olive oil, topped with nuts (we love it with pecans).
It is a very basic and super easy recipe. We simple toast one slice of bread and put half of an avocado on the toast. You can either spread the avocado on like butter or just put slices on the toast. Then you will want to top it with a poached egg (we’ve also done eggs fried in coconut oil). For this recipe, we used the Oroweat Healthfull Bread Steel Cut Oats and Honey bread.
So what we are going to show you for this recipe is how to poach an egg!
Step #1 – find a pan that you can add at least 2 inches of water to the bottom. If you are making a lot, a deep pan works well like shown, or if you are just making 2-3, a pot will work fine. Add about a TBSP of vinegar so the eggs will coagulate. You can also add a bit of salt to the water if you want.
Step #2 – Bring the water to a boil. Then once it reaches that boil, turn it down to a simmer. As you can see, I brought my burner to a 1.4 after it reached a boil.
Step #3 – Gently and slowly add your cracked egg into the water. You don’t want the yolk breaking apart and you don’t want your egg to fall from a higher distance, so the best way to do this is by slightly submerging the egg in the water and tilt the bowl to where the egg slides out gently.
Step #4 – let your eggs simmer for about 4 minutes for a soft center and 5 for medium center and 6 for a hard center.
Step #5 – Now scoop out your eggs (gently, especially for soft boil) and gently place on a paper towel to dry.
Step #6 – Once it is dry, just place on your toast with avocado and enjoy! It’s AMAZING and so good for you.
Like we mentioned, we love this dish for lunch, alongside a green salad topped with balsamic vinegar, olive oil and pecans (plus seasonal berries when we have them!)

I have had a few of their breads and have really liked them! We have been eating more eggs and avocados but I have not tried poaching them in water yet. When I was young my dad taught me to poach eggs in milk but I haven’t done that in decades.

I haven’t had any luck finding decent bread here. I recently moved to North Dakota so there are a few grocery options around, but anything else is such a far drive! I typically just do the sandwich thins, but a nice actual piece of bread with only 15 carbs…that would be fantastic! I May just have to order some of each!
