This is a simple but WOW treat! Our whole family LOVES it. This is my mom’s creation. She is a great cook and makes many wonderful things…. including this! We also love this as it is a healthier…. alternative to many desserts and this one is also gluten-free!
We wanted to share this as this is the perfect season with the warmer weather approaching and berries being in season.
So here’s what you need to make this sweet treat!
- 3 cubed Golden Delicious or Red Delicious apples
- 1 lb strawberries
- 1 6oz package of blueberries or blackberries
- ½ cup sugar
- 2 cups whipped cream (this just puts a light glaze on the fruit)
- ½ an 8oz. container of whipped mixed berry cream cheese
- ½ an 8oz. container of regular whipped cream cheese
- Mint leaves for a garnish and to “cleanse the pallet”
To make:
- Wash and cut your apples into cubes and strawberries into quarters and wash the other berries.
- Then mix the berries and apples in a bowl with the sugar and whipped cream. This will give them a nice coating and take the tart bite out a bit!
- Mix the berry cream cheese with the regular cream cheese in a separate bowl.
- Then place in your serving dishes. My mom likes to serve them in champagne glasses. Sometimes she even uses the disposable ones from the Dollar Store.
- Then top with a dollop of the cream cheese mixture and a mint leaf!
- Serve immediately!
Yummo!!
And this particular meal was a 3-generation effort! My grandmother provided these gorgeous daffodils from her garden – they are so perfect that they look fake!
Enjoy your fresh berry treat that reminds me so much of summer!
