This recipe is a little overdue! I was planning to post this last week, but it is now here!
First, I chose this recipe for one of our dinners last Thursday as I had the Velveeta cheese loaf that I needed to use. I have not used Velveeta much in anything, but we were able to get some cheap and thought it would be nice to try some new recipes with it! As I was not sure how to cook with Velveeta, I searched for recipes and found a very yummy Macaroni and Cheese recipe!
This one is called Velveeta Down-Home Macaroni & Cheese! I got this recipe right off of the Kraft site, as, again, I really wasn’t sure how to cook with it! I must say, the times that we can score a super deal on Velveeta, this will be our top use for it as it is a very rich and creamy mac and cheese! Plus the buttered and crushed Ritz crackers to top it off!
Here is what you will need:

1/4 cup (1/2 stick) butter or margarine, divided

1/4 cup flour

1 cup milk

1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes

2 cups elbow macaroni, cooked, drained

1/2 cup KRAFT Shredded Cheddar Cheese

6 RITZ Crackers, crushed
Here’s how to make!
- Heat oven to 350°F. 3 Tbsp.
- Melt butter in medium saucepan on medium heat. Whisk in flour; cook 2 min., stirring constantly. Gradually stir in milk; cook until mixture boils and thickens, stirring constantly. Add VELVEETA; cook 3 min. or until melted, stirring frequently. Stir in macaroni.
- Spoon into 2-qt. casserole sprayed with cooking spray; sprinkle with Cheddar. Melt remaining butter; toss with cracker crumbs. Sprinkle over casserole.
- Bake for 20 minutes or until heated through.
Oh so Yummy – your family will love it! I know that this one was not my typical as I followed a recipe! But is was well worth it! I look forward to sharing our traditional mac and cheese that we make in a crockpot, but for now, if you have Velveeta in your pantry and need a yummy dinner idea….. then here you go!
