We made tacos last night (a no brainer with the 3 packs of torilla shells purchased!) and as we were preparing things, we wanted Spanish Rice. In our Thrifty Store, we have full shelves, but we ran out of spanish rice kits! So, we saw that we had a ton of rice and a ton of taco seasoning!
Now, I am not a creative person, but my cooking is experimental and sometimes works out well and sometimes a total dud! What I am about to share, may not be anything new – but it was new to us and so I wanted to share it!
This recipe is literally just 2 ingredients:

So all we did was make enough rice to equal six servings. According to my rice package – this is 1.5 cups of dry rice. I first added the water, then dumped the taco seasoning into the water. Added the rice and let is cook for the 20 minutes and it came our perfectly! In fact, it was so good, that this is now our preferred Spanish rice. I also think it is a bit healthier too as the kits require oil or butter, etc.! Yea – it was one of the fastest hands on (only less than 2-3 minutes attention, plus the 20 minutes to cook) side dishes to make, plus incredibly inexpensive! My kids like this better as the kits also have the dried onions and peppers at they sit at the table complaining it is “spicy” when they see those little green and red things as an automatic reaction. No complaints this time!

I knew I wanted Spanish Rice. I only had Rice, a Rice Cooker, and a packet of Taco Seasoning. So I did a google search and wow. Who knew. Your website was super helpful. I put two dry cups of white rice in my rice cooker, I added 3 cups of water, I added 1 taco seasoning packet and a couple dashes of salt, stirred, then started the rice cooker. Never open a rice cooker until it’s done! When the rice cooker alarm went off, I let it sit for 15 additional minutes, then I opened the lid and added in 1 cup of Pico de Gallo (suddenly remembered that I had just bought this!) and stirred until everything was gently blended. It smells and tastes really nice. I will serve this with black beans and a juicy pork tenderloin! thank you.
