It’s COLD out there! We have so much snow and it is so cold that we are homebound for the first time in years. In fact, the snow is so deep and so heavy that this year, our snow slid off the roof of our house and came down with such force that it broke the fence! We’ve always lived in the Rocky Mountain Northwest and this is the first time that we have had snow damage to this level.
Well, enough chit chat about freezing our tails off…we decided to whip up some snowy comfort food – Snowball Cookies! As we were in the process, I realized how frugal and easy these are to make. I am going to share the classic recipe, but also show substitutes that you can use to make them healthier and to meet diet restrictions.
Not only are these a fun, fast, winter comfort food, but these are also a common dessert at weddings called wedding cookies. You can make these in snowball shape for weddings or wedding showers, but crescent shapes are often the more common approach. But our family likes to call them Edible Snowballs!
There is a slight difference between our Snowball Cookies and the classic wedding cookies. This recipe makes them a little less sweet and more of a rich buttery flavor. You can add about 3 teaspoons of vanilla extract if you want them to be a bit sweeter and more traditional to the wedding cookies. In addition, the traditional wedding cookies will use finely ground almonds versus the sliced almonds. However, both are fantastic! We love the almond slices as we can get that almond taste combined with the buttery taste for a nice, buttery-smooth treat.
Ingredients
- 2 ½ Cups flour (make these gluten-free by using the BEST EVER GF flour HERE)
- 1 Cup butter (these can be dairy-free by using shortening. Better yet, be dairy free and healthy by substituting homemade vegan butter – ACK – I have GOT to share this recipe. I have it stored in my mind, but yet to share here. When I do, I will update this post for a dairy-free, healthy butter alternative. Its base is coconut oil :))
- ¼ Cup sliced almonds
- 3 Cups powdered sugar (can’t really get around this one for a healthier swap, but since it is the only sugar and just rolled, it’s not too much).
Directions
- Preheat oven to 325F.
- Prepare a baking tray with non-stick cooking spray.
- In a bowl combine the butter, flour, and sliced almonds.
- Mix well until thick.
- Roll into 1 inch balls.
- Coat with the powdered sugar and transfer to the tray.
- Place in the oven and bake for 12 -15 minutes.
- Remove from the oven.
- Serve and enjoy.

Love the simplicity of the cookie recipe but our weather atm is the complete opposite of here.
Should we need to cross the road, our flip-flops melt and stick to the bitumen.
