There is nothing that screams “YAY summer is on the WAY” like a fresh salad with fresh fixin’s and fresh homemade dressings!
Salads are a staple in our home and it is so easy to make your own “gourmet” dressings in just a few minutes. We make Emergency Ranch, Buttermilk Ranch, Italian, Apple Cider Vinaigrette and many more, spur of the moment!
So, here’s how to make a Fresh Strawberry Spinach Salad with Homemade Strawberry Vinaigrette Dressing.
Ingredients:
- ¼ cup yellow onion, finely chopped
- 4 tablespoons raspberry vinegar
- 4 tablespoons extra virgin olive oil
- ½ pound baby spinach
- 1 cup strawberries
- 1/3 cup sliced almonds
- 2 ounces fresh goat cheese, crumbled
Directions:
1. In a small bowl, whisk together chopped onion, raspberry vinegar and olive oil
2. In serving bowl, combine spinach and strawberries
3. Sprinkle on almond sliced almonds and goat cheese crumbles
4. Immediately before serving, drizzle dressing over the salad and gently toss
YES….. It is that easy, but you serve a fancy gourmet salad to your family or guests! YUM!

It would be Thrifty if you didn’t have to buy the Raspberry Vinegar ; (

Hi Joyce,
You may be able to get the vinegar pretty cheap. In our area, we can get a bottle of it for $1.50, which is cheaper than dressing and I can make this last much further since I am making it. It is usually found where the vinegars are. Hopefully that helps!
