We’ve been dealing with sickness over here since the weekend, so we are a little more quiet than usual. But as we continue with Be Intentional Month, Dinner By 10 is one of those habits that we encourage you to develop. Not sure what Dinner By 10 is? Read about Dinner By 10 HERE.
With that, it is almost 10 where we are at and so we wanted to share what we are having for dinner and want you to share too!
I got organic baby bella (portabella) mushrooms really cheap this week. Alex and I love mushrooms, but our kids aren’t the biggest fans of them. So…. How do I incorporate them into dinner to get them to eat them??
Well, I will be making:
- Homemade mushroom bites – I will be making the mushroom bites in the baby cakes maker my sister gave us for Christmas, which means that they will be a super fast mushroom side!
- The best Chicken Marsala (recipe HERE) using the natural chicken from Zaycon Foods and the cooking wines we stocked up on a few months ago.
- 6-Layer salad (all made with organic ingredients and the dark healthy greens and an alternative Mayo – original recipe for 6-layer salad HERE)
- And a side of brown rice for the tummy filler. This is a super yummy meal and it is made super easily with the right tools too!
I love my Aroma Rice Cooker – it takes me less than 2 minutes to have perfectly cooked brown rice. This is my #1 lifesaver next to my crockpot in the kitchen!
AND…. since we also picked up a number of pre-made pie crusts for markdown this week that are sitting in the freezer, our daughters are trying to convince us to make fruit tarts for dessert in the baby cakes maker. That might be added 🙂
The chicken is out of the freezer now to defrost so that it will be thawed by 4:30 and dinner will be done by 5:00!
