15-Minute Soba Noodles with Homemade Japanese Sauce is the solution to my meal dilemma on those busy days!
I am a super busy mom. In addition to being a full-time blogger, believe it or not, I have six kids. Six hungry kids. I have just a little bit of time and just a little bit of budget to make meals that are filling and hearty.
My kids get tired of the classic spaghetti or other plain pasta dishes. So I started making something new and unique and they LOVE it!
Soba Noodles with Homemade Japanese Sauce – or Asian Sauce. Whatever you want to call it. But I think Soba Noodles are a classic Japanese dish, so I call this Asian sauce variation a Japanese Sauce. 🙂
In any regard, it’s cheap, it’s fast, it’s easy, and it satisfies! Everyone is happy and content until dinner. Even though I have been known to make this for dinner too on those crazy busy nights.
This is also healthier because Soba noodles are buckwheat noodles. You can honestly make this same recipe using any pasta, but classically, Soba noodles are used and it makes it a little healthier. In addition, we use Bragg’s Liquid Aminos as a healthier replacement for soy sauce. Just the pasta to Soba and soy sauce to liquid aminos swaps, this is a pretty healthy meal!
I will serve it will steamed veggies and fresh fruit. It’s a perfect, well-rounded meal!
15-Minute Soba Noodles with
Homemade Japanese Sauce
Ingredients
- 1 Package soba noodles
- 2 Tsps salt
- ¼ Cup soy sauce
- ¼ Cup honey
- ⅓ Cup cornstarch
- 2 Tsps turmeric
- Sesame seeds to taste
Directions
- Bring a pot of water to a boil, then reduce to a simmer.
- Add the salt and the soba noodles.
- Cook following the packaging instructions or until al dente.
- Drain the water and rinse with cold water.
- Add the turmeric and mix.
- In a small bowl, mix the honey, soy sauce, and cornstarch.
- Pour onto the soba noodles and mix well.
- Serve in bowls and top with the sesame seeds.
- Enjoy.
Tips
Spice it up with some sriracha sauce.
