I love using my crockpot all year round (as I am sure most of us do!) but it is ESPECIALLY helpful in the summer when you 1. don’t want to heat up the kitchen in the already heat of the summer, 2. when you want to enjoy the outdoors and warm weather and not be spending the time cooking in the kitchen!
So, I am sharing a crockpot recipe as our next frugal meal idea! I am actually using the classic Betty Crocker Meatloaf, you know the ones our moms made, with a couple of frugal tips to make more for less, but you can follow the same cooking times and principles for cooking any type of meatloaf in the crockpot!
Here’s the ingredients needed:
- 1.5 lbs. of ground beef (or turkey)
- 1 can of tomato soup
- 1/2 medium onion
- 4 slices of bread, crumbled
- 2 eggs
*You can also use half of the meat by replacing half with cooked rice or cooked beans (like pinto/black/kidney) this not only saves you loads of money, but calories and health too!
How To Make the Classic Meatloaf in a Crockpot:
- In a large bowl, mix all of the ingredients together until well blended.
- Spray the inside of a crockpot with cooking spray.
- Spread the meat mixture in the crockpot and top with as much ketchup as you would like
- Turn the crockpot on low and cook for 6-8 hours or on high for 4 hours.
- Once fully cooked, turn the crockpot off and let the meatloaf sit for 15-20 minutes before cutting, otherwise, it will be a little crumbly.
- Serve with potatoes and steamed veggies (as these are perfect side accompaniments)
There you have it! The classic Betty Crocker meatloaf…but in a crockpot. If anything, know that this is a fantastic method any time of the year and a much more convenient way to make this or any meatloaf!
