Okay, so here is the next night of our weekly menu, bear with me as I try to figure out the best format to share this with all of you! I am sure I will be able to have a once a week post (with posting a recipe or two throughout the week!) with the details of the price breakdown! But, for this first week, I am just kinda mincing things all together! At any rate….. hang in there with me!

So here’s a recap of our dinner menu this week! To catch up on what is going on here….. see our previous post!

Dinner Menu:

  • Monday: Sweet and Sour Meatballs  over rice, Grapefruit and Avocado Salad (see previous post for recipe!)
  • Tuesday: Sloppy Joe Pot Pie with ground Turkey (see recipe tomorrow), corn and green salad
  • Wednesday: Crockpot Chicken, pasta salad, steamed broccoli, rolls
  • Thursday: beef stroganoff, steamed veggies, fresh fruit
  • Friday: out for family Valentine’s Date
  • Saturday: couple Valentines Date in
  • Sunday: ?

Cost breakdown of each meal!

Tuesday: Sloppy Joe Pot Pie with ground Turkey, corn and green salad (see recipe in post tomorrow!)

  • 1 lb. ground turkey – $2.29
  • 1 can Manwich .50
  • 1 onion .20
  • 1 package of shredded cheese (we used a mexican blend) .90
  • 1 cup Bisquick mix .05 worth
  • 1/2 cup milk about .10 worth
  • 1 egg .17
  • 2 Cans corn (.20 each) .40
  • Lettuce from our Sam’s Club organic Mescalin Mix  about $1.21 (this meal)
  • Salad dressings approximately .20

Total Cost: $6.02 for the whole meal for 6 (PLUS leftovers for lunch the next day) = about $1 per serving!

Wednesday: Crockpot Chicken, pasta salad, steamed broccoli, rolls EMERGENCY back-up plan!!! I fumbled as this was suppossed to be tonights dinner.  I was looking forward to eating it! What happened? Something that has not happened in over 3-years occurred in our house today! I headed to The Thrifty Store (our basement filled with shelves of food and 2 full chest freezers!), and began rummaging through the meat freezer, the chicken was not to be found!!! WHAT – NO CHICKEN! I tore through BOTH freezers! With nearly frostbitten hands (not really but trying to gain sympathy:)) and 30 minutes later – I turned up no chicken! I realized that I was off on my inventory, I had a menu with chicken on it for tonight and none to be found!

ran out of chicken

This really has not happened for quite some time, beef and chicken are the 2 main protein staples in our house and I let the chicken run out! I tried to remember why we didn’t have any, one thought came to mind….. remember the .25 packs of Gold n’ Plump chicken, well I had 7 packs on my list, but when I got to the store, they were out and I forgot to go back! So while I figure what I am going to do to get cheap chicken fast, I spotted the Stouffer’s Family Size lasagna! Thankful for the convenience meals in a bind!

Wednesday modified: Lasagna, steamed broccoli, rolls

  • Stouffer’s Family Size Lasagna $6.49
  • 1 lb. fresh Steamed broccoli .51
  • Rhodes rolls $1.46
  • Keebler Cheesecake middles cookies FREE

Total Cost: $8.46 = $1.41 each serving. We have 2/3 of this huge pan of lasagna left!!!

Thursday: beef stroganoff, steamed veggies, fresh fruit Change of plan yet again, I am telling ya, this chicken thing really messed us up this week! So why the change? Well, we have a big Coupon Class for Clinton City in Clinton, UT tomorrow night AND we literally have 2/3 of a lasgana left! So a quick re-heat dinner and we are all out of the door for a fun Coupon Class!

  • Leftover Lasgana $0.00
  • Leftover rolls $0.00
  • Salad $1.21
  • Dressing approximately .20

Total Cost: $1.41 = .24 each serving!

We have open plans for Friday and Saturday, one night due to the holiday for a date (probably date night in with steaks in our freezer, but we haven’t figured for sure yet 😉 )  and the second for our usual family dinner out!

All-in-all our dinners (other than eating out and the holiday dinner this week) cost us $22.44 this week! Yay!

Well, I am a little embarrassed that I decided to start sharing this and it was a week with missing food and holidays! But hey, thankfully with full shelves and freezers, we were able to come up with something! Better try next week!
