October 8th Fun Fabulous Friday iTunes $15 Gift Card Winner

It is time to announce the winner from this Friday’s giveaway! This week the giveaway for for a $15 iTunes gift card.

As an entry into the giveaway, many of you shared your favorite salad toppings, mix-ins and recipes.  You will want to read through the comments to get some great ideas to creatively change up that salad on your table for a healthy addition to dinner. There were a ton of fabulous ideas shared to spruce up those salads so check them out.

We also wanted to share a recipe that we tried out this week.  Corn and Black Bean Salad.  It is really easy to make and tastes great.  Our eldest child even gave it the label “candy salad.”  I am not sure if we would call it candy salad, but at any rate, everyone loved it and will probably be a regular addition to our weekly Mexican food night at our house! So we have named our variation Mexican Candy Salad!

Mexican Candy Salad (a.k.a. Corn and Black Bean Salad)

The items in bold are the exact ones that we used for this “Mexican candy salad,” but we listed a couple of other alternatives based on your tastes or what’s available in your fridge.

• Mix 1 12oz. can of drained whole kernel corn with 1 15 oz. can of drained black beans.
• Mix in 1 Medium tomato finely chopped. We also use cherry tomatoes quartered – whatever tomato product when have in the fridge!
• Mix in 1/4 cup of red onion finely chopped.
• Mix in 1/2 tbls. of very finely diced fresh mint leaves.  We just grabbed 4 leaves and finely chopped them.  You could also use Cilantro for a slightly different taste.
• Squeeze 1/4 of a lemon (1 wedge if you slice a full lemon in quarters) over the salad and stir-it all together! Lime works too, for a slightly different variation!
• Serve! You could also chill it for a while before serving if you would like.
