Lazy Chicken Pot Pie

Lazy Chicken Pot Pie is a new favorite recipe in our home! It is so good in fact, that we may become our preferred pot pie method! Find out how I made up Lazy Chicken Pot Pie and indulge too! 

So I made up a new recipe that ended up being completely tasty and fantastic! My kids were raving and begging for this dish to be included in our “regular roundup of recipes.” 

I have to admit, it was good. At the time I was making it, I kinda viewed it as a pot pie because the ingredients of chicken, frozen veggies and prepared SOS mix are what I use to make traditional chicken pot pies. But the hardest part is the crust. 

So when I pulled out ingredients and thought about what I could make – Lazy Chicken Pot Pie came to mind with the tater tots being like the bottom crust and the fried onions like that of the top crust. 

Well, it was a mixture made in pot pie and lazy heaven. It was so super fast to assemble that using the word “pie” is probably an offense to all real chefs, but since I am not a real chef…I am claiming victory over this recipe! 

Lazy Chicken Pot Pie

I am not a GF eater, but for health reasons, I try to eat minimal gluten. So I was extra pleased that it had that similar pot pie flavor without the flour crust. You can also find GF Fried Onions, so that helps to keep it gluten free! 

For this recipe, there is one key ingredient that is pure awesome, fat free and helpful. That is the SOS mix. It is a recipe we shared on our site many years ago. I use it as a replacement for all creamed soups, gravies, many sauces and cheese sauces. It’s a Soup or Sauce mix (thus the SOS). I whipped up a 3-cup batch worth for the “pot” part of this Lazy Chicken Pot Pie. 

You will want to whip up a batch too. It’s really easy to make. Make it in bulk and follow many of the recipes on our site here using it, as well as use it as an alternative to any recipe calling for creamed soups, gravies, cheese sauces and other sauces. 

Along with that, let’s get right to the recipe so you can have Lazy Chicken Pot Pie on the table in no time! 

Ingredients needed for Lazy Chicken Pot Pie:

  • 1 package of frozen tater tots
  • 2 cups of cooked, shredded chicken
  • 1-2 12 oz. bags of frozen mixed veggies (depending on how many veggies you want)
  • 2 cups of cheddar or mozzarella cheese (optional)
  • 3 cups of SOS mix prepared as a cream soup
  • Fried onions for the top (Use GF Fried Onions to keep it gluten free)
  • You can also sprinkle bread crumbs on top if desired. 

Directions for Lazy Chicken Pot Pie:

  • Dump a bag of frozen tater tots on the bottom of a sprayed 9×13 or larger pan.

Lazy Chicken Pot Pie

  • Dump a bag or two of frozen veggies on top of the chicken and spread evenly.

  • Spread the 2 cups of cheese as the next layer.

  • Mix 3 cups of the SOS mix by using 1 cup of mix and 3 cups of water (or chicken broth) and cook on the stovetop until it slightly thickens and bubbles.

  • Pour the cooked SOS mix over the top and spread evenly.

  • Cook in the oven at 400 degrees for 40 minutes, until the sauce is nice and bubbly. 
  • Add a layer of fried onions on top (or bread crumbs) and bake for another 5 mins.

Ingredients

    My family LOOOOVES chicken pot pie. I’m not really sure why, either, because it’s one of those hidden “super simple” recipes. I’m going to try this out, because we also really like french fried onions. If you like fried onions, adding them to your coating for chicken fingers is awesome, too.
