Protein Packed Quinoa Pancakes with Apple

  • 1⅓ cup cooked quinoa (Use slightly over cooked quinoa as it binds better as it is a bit sticky)
  • ¼ cup + 2 tbs oat flour
  • 2 tablespoons flaxseed, ground
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 apple, peeled and grated
  • 2 tablespoons almond milk
  • 2 tablespoons maple syrup
  1. Spray a pan with non stick and pre heat to medium. Combine the quinoa, flour, flaxseed and cinnamon in a bowl and mix until combined.
  2. Add in the eggs, syrup and apple and mix. Stir in the almond milk.
  3. Let sit briefly (1-2 minutes) on the counter and the batter will thicken.
  4. Use a silicone spatula to portion out and form the pancakes into the pan. Because this isn't a liquid life batter, you'll need to shape the pancakes.
  5. Cook for 3-4 minutes or until brown on one side. Flip and repeat until cooked through (one to two minutes).
  6. Remove from the pan and top with maple syrup!
  7. Makes five pancakes.
