This is a super fast, layered version of a Chicken Pot Pie that only takes minutes to assemble, but when baked, has that classic chicken pot pie flavor!

Ingredients
1 package of frozen tater tots
2 cups of cooked, shredded chicken
1-2 12 oz. bags of frozen mixed veggies (depending on how many veggies you want)
2 cups of cheddar or mozzarella cheese (optional)
3 cups of SOS mix prepared as a cream soup
Fried onions for the top (Use GF Fried Onions to keep it gluten free)
You can also sprinkle bread crumbs on top if desired.
Instructions
Dump a bag of frozen tater tots on the bottom of a sprayed 9x13 or larger pan.
Add the 2 cups of shredded chicken (Here's a post on where I get my chicken and how I shred it super fast and slick!)
Dump a bag or two of frozen veggies on top of the chicken and spread evenly.
Spread the 2 cups of cheese as the next layer.
Mix 3 cups of the SOS mix by using 1 cup of mix and 3 cups of water (or chicken broth) and cook on the stovetop until it slightly thickens and bubbles.
Pour the cooked SOS mix over the top and spread evenly.
Cook in the oven at 400 degrees for 40 minutes, until the sauce is nice and bubbly.
Add a layer of fried onions on top (or bread crumbs) and bake for another 5 mins.
Serve warm!
