Peanut Butter Chocolate Blondie Brownies Bars Recipe

- 1 cup creamy or chunky peanut butter (we use fresh ground peanut butter with no added sugar or ingredients)
- 6 tablespoons butter or margarine, softened (coconut oil is a good, healthier swap)
- 1¼ cups granulated sugar (baking stevia is a great alternative)
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (for GF version, try the BEST EVER GF flour)
- ¼ teaspoon salt
- 1¾ cups (11.5-ounce package) milk chocolate chips, divided (carob chips are a dairy-free version)
- Preheat oven to 350º F and grease a 9x9 pan with nonstick spray.
- In a large mixing bowl, beat the peanut butter and softened butter until smooth.
- Add in eggs, vanilla and sugar and mix well.
- Add flour and salt and blend for 30 seconds.
- Stir in ¾ cup chocolate chips.
- Spread mixture into pan.
- Bake 30 minutes and top with remaining chocolate chips. Let the chips melt for 5 minutes and then spread evenly. Let cool and cut into bars.
