Author: Cassie from The Thrifty Couple
Recipe type: Dessert
- 1 box white cake mix (I used Duncan Hines)
- ⅓ cup vegetable oil
- 2 large eggs
- ½ cup powdered sugar
- Red and blue food gel/coloring
- Preheat oven to 350°.
- Line a cookie sheet with parchment paper. Set aside.
- In a medium mixing bowl, add the cake mix, oil and eggs. Mix with a spoon until well incorporated (the cookie dough will be very sticky).
- Using 3 smaller bowls, divide up the dough into three equal parts.
- In one bowl, add 3 drops red food gel. In the second bowl, add 2 drops blue food gel. The third bowl does not need any food coloring.
- Cover with plastic wrap and refrigerate the 3 bowls of cookie dough for an hour.
- Scoop the powdered sugar into a shallow bowl.
- Once chilled, form the cookie dough into 1 inch balls.
- Roll each 1 inch ball into the powdered sugar and place on the cookie sheet. Be sure to position them at least 1 inch apart for expansion.
- Bake for 10 minutes exactly or the powdered sugar will start to brown.
- Let the cookies cool on the cookie sheet for 5 minutes before transferring to a wire rack to completely cool.
- ENJOY!!
