Recipe type: Appetizer or Vegetable Side
Cuisine: Italian Inspired
Serves: 6
  • 3 Tomatoes
  • 3 Bacon strips, cooked and crumbled
  • ⅓ c Parmesan cheese, grated fine
  • ½ t Rosemary, dried
  • sprinkling Seasoned Salt
  • sprinkling Pepper
  • 1 Tbsp. Olive Oil
  1. Preheat oven to 350
  2. Cut tomatoes in half and place in parchment lined baking dish
  3. Sprinkle with salt and pepper.
  4. Distribute the parmesan cheese evenly over all six pieces of tomato.
  5. Place approximately ½ strip of crumbled bacon on top of each tomato.
  6. Sprinkle the rosemary over each tomato.
  7. Drizzle the olive oil over the tomatoes.
  8. Bake for approximately 25 – 30 minutes, or until tomato is soft.
  9. Let rest after removing from the oven for approximately 10 minutes, and garnish with a dollop of sour cream on each tomato.
This really isn't a dish that can be prepared before hand. It really needs to be served warm. However, you can make all preparations, including frying the bacon, shredding the parmesan, etc. and then assemble and bake right before serving. Once the prep work is done, it is really only the baking time needed.
