Whether you love or hate radishes, this recipe has been loved by all members of our family as the new favorite side dish!
Author: Cassie from The Thrifty Couple
Recipe type: Vegetable Side
Cuisine: American
Serves: 8
Ingredients
4 cups of radishes
1 TBSP Coconut Oil Melted (you can also use olive oil, we just love coconut oil)
3 TBSP Fresh Lemon Juice or about 1 small lemon or ½ of a large lemon
3 TBSP honey (we love to use local raw honey)
Dashes of pepper
Instructions
• Wash radishes and cut the stems/roots off. Then cut them in half/thirds/quarters depending on how big they are.
• Mix your sauce by whisking all of the other ingredients together in a bowl until well blended.
• Pour the sauce over the washed and cut radishes and mix well and evenly.
• Spread the coated radishes onto a greased cookie sheet or glass cake pan, trying to make an even layer.
• Bake in the oven at 400 degrees for 20-25 minutes until the outside begins to crisp a little and turn brown (the insides will still be soft).
• Serve warm and immediately
• Enjoy!
Notes
We have found that these are best prepared with your meal and do not make great leftovers, unless reheated in the oven for an additional 5 minutes or so on 400 degrees. Microwaving later just makes them soggy.
