Take a breakfast staple and make it into everyone's favorite breakfast: cake! Don't forget to add in some of those fresh/dry fruit or nuts you've found marked down at the store to add a little flavor and variety!

Ingredients
Dry Ingredients
3 cups quick-cooking oats
1 cup flour
1 cup packed brown sugar
2.5 tsp baking powder
1 tsp salt
1 tsp ground cinnamon
Wet Ingredients
1 tsp vanilla
3 eggs
1 cup milk
½ cup butter, melted
Optional
Dried or fresh fruit
Nuts
Ice cream or whipped cream topping
Instructions
Mix together the dry ingredients in a large mixing bowl
In a separate bowl, mix the wet ingredients until blended well
Slowly stir dry ingredients into the mixed wet ingredients.
Stir in any optional ingredients such as dried/fresh fruit or nuts. We used raspberries that we found deeply discounted and reconstituted dried apples as we had them on hand.
Pour mixture into greased 9×13″ baking pan. Bake at 350 degrees for 40 minutes or until the knife comes out clean.
Cool and optionally top with whipped cream or serve a la mode.
