As you know, we get these baskets quite frequently from our local produce co-op called Bountiful Baskets. We normally get the organic basket for $25, but this week we opted for the conventional at $15. We don’t think it was as great of a deal as last week, but we probably definitely still received our money’s worth….if you like eggplant.
- 5 lb bag of Idaho Russets potatoes
- 6 plums
- 1 bunch bananas
- Bag of beans
- 1 head cabbage
- 2 tomatoes
- 1 bag of grapes
- 7 large peaches
- 2 eggplant
- 1 head of lettuce
It looks like eggplant parmigiana (Cassie’s favorite!) in on the menu this week. I for one will be thankful for the food but excited when the eggplants are used up.

We have also posted this information before, but we wanted to keep posting it in these posts so that everyone reading can have some ideas on how to get involved with a produce coop:
There are many produce co-ops and grocery co op groups and it’s various forms across the nation that you can join and be a part of. A good place to start looking is at a the site localharvest.org (which is going to help you get organic local food) or coopdirectory.org (I am not sure how updated this site is as our area’s listings were old and many not listed, but at least worth a shot!) or search produce co-op your state under google and see what listings come up.

Did you do bountifulbaskets.org? That looks like what I got today from my pick-up site. Oh and I’m going to slice the eggplant, and do a egg batter/bread crumb mix then FRY. Everything tastes better in oil!

Hi Shelly,
Yes – we get them from BountifulBaskets.org. Love the idea 🙂 We usually make eggplant parmigiana, but between all the ideas on our Facebook page and here we will probably do something different this time!
