Ingredients
  • 2¾ Cup of the pre-made muffin mix or the gluten-free muffin mix.
  • 2 TBSP of Olive Oil
  • 1 cup of pumpkin puree' (100% pumpkin, not pie filling)
  • 1 beaten egg
  • 1.5 tsp. of pumpkin pie spice
  • ½ tsp of cinnamon
Instructions
  1. Mix the beaten egg, pumpkin puree', pumpkin pie spice, cinnamon and olive oil together and pour into the dry muffin mix.
  2. Mix with a fork until well blended.
  3. Pour into your bread pan.
  4. Bake at 350 degrees for 30-40 minutes or until a toothpick comes out clean.
Notes
These freeze very well and can make for a quick breakfast or snack.
