Here's an easy, quick, healthy dinner side that my family loves - finally a recipe for broccoli that they will eat and enjoy!

Ingredients
  • fresh broccoli (frozen would probably work, but I don't think you would get quite the same consistency)
  • olive oil
  • pepper
  • salt
  • garlic
Instructions
  1. Simply wash and cut the broccoli to bite size pieces
  2. Then put the broccoli in a bowl and pour olive oil over and stir until well coated
  3. Add salt and pepper to taste
  4. Add minced garlic (I often have fresh, but to save time and include even more flavor, I have the fresh minced jars from the produce department. They are very large jars for around $5 and they last me forever!)
  5. Stir it all up until well coated and even spices distribution
  6. Spray a cake pan with non-stick cooking spray and spread out your broccoli mixture evenly
  7. Pop in the oven on 400 degrees for about 15 minutes until the tips of the broccoli start turning a nice dark golden brown. The rest of the broccoli will crisp, but not turn dark! You can "roast" it for more or less time depending on how crisp you want it.
  8. Serve it up and enjoy!
