How to Cut Kernels from Corn on the Cob
It’s corn on the cob season and so it is a GREAT time to take advantage of local farmer’s sales and farmer’s markets and stock your freezer or fill your cans with fresh corn from the local farmers. We also found a local source that offers non-gmo corn at .25 per ear! So we stock up from this local farmer these few weeks and then freeze or can to preserve for corn all year!
But, it can be long and a little scary cutting the corn off the cob if you don’t do it right! The corn is slippery and a quick slip of the knife is not that uncommon when cutting corn off the cob. Plus it is awkward and cumbersome.
So we wanted to share the trick we use to cut corn off the cob quickly! This allows you to save money, health and time in preparing your own corn!
Shuck the corn and remove as many hairs as you can. Then get a medium to large bowl and place a small bowl upside down in the bottom.
Cut the end off of the corn to make it “even.”
Set the even end of the corn on the bottom of the smaller bowl, inside the larger bowl.
The reason why is… the larger bowl with “catch” the kernels and the smaller bowl raises the corn so that you can cut all the way down without restriction.
The next trick to a “clean cut” is to use a small and sharp knife. Paring knives are perfect. The smaller the knife, the less “flying” you will have… along with cutting down the cob slowly.
This is one cob of kernels – which is about 2 cups or 16oz, perfect for a meal and the typical size of store-bought frozen corn = .25 for the veggie side and juicier and non-gmo in our case!
We just end up freezing in sandwich bags. Right after we cut the corn off, we dump one cob worth in the sandwich bag. We have also done much larger portions in gallon size bags too.
So next time you have an opportunity to get fresh corn on the cob cheap, consider this trick!
