No Bake Pumpkin Pie (Would You Make This Instead?)

So I was doing some recipe research online for some pumpkin recipes for our holiday meals and I stumbled across a recipe for a No-Bake Pumpkin Pie.

I mentioned it to Alex and his first reaction was not good…. You know how guys are…. you don’t mess with their classic favorites.  He loves pumpkin pie, especially the one or twice a year homemade ones that he gets on Thanksgiving or Christmas.  He really does not want me to mess with his precious pumpkin pie.

But this recipe sounds really interesting.  It sounds like something I really want to try, maybe not for one of the two holiday meals so it doesn’t ruin the meal ;) , but perhaps another time.

I love pumpkin pie too, but the sound of this has me torn.  Part of me thinks it sounds really good, the other part of me says “eeewww.”

Either way, we want to get your opinion! Would you try this?  Do you think it would be a good and easy replacement?

If you make the no-bake version you need to make sure that your guests are aware of the raw egg whites. I am allergic to eggs and the allergin is located in the egg white. Raw egg whites would make me ill. I even have to stay away from pies with meringue because the egg white is not cooked enough. Since this is not visible I would probably try a piece not knowing that the egg whites were not cooked.
Egg allergies are weird. I can eat things with cooked eggs but not raw. The molecular structure of eggs changes when they are cooked and often the allergin is not present once cooked.
Also, a big concern is salmonella whenever you are using raw egg whites.

That is a really good point Marjorie! We are always super careful about ingredients in foods as we have a daughter with a deadly peanut and tree nut allergy. Because it does look like regular pumpkin pie, that would be a very important point! Thanks for pointing that out Marjorie!
