We continue to share recipes that we make each and every morning to serve in our thrifty home.  Oatmeal is definitely one of our staples in our pantry.  It’s also a family favorite but can become a little boring if we don’t continue adding a little flair or even prepare it in different fashion.  I actually came up with this recipe a while ago to do just that – take a pantry staple and make it into something a bit different yet filling at the same time.

So why is this posted on our site?  First, as we just mentioned, oatmeal is a definite staple and when we buy it in bulk is so cheap.  But not only that, we love finding new ingredients (those optional ones) such as different berries and fruit ideas to make it a bit different each time we make it.  This week we made this cake and added a family favorite – fresh red raspberries and reconstituted dried apples!  We found the raspberries for $1.15 per pint and they were a perfect addition giving us a little bit of a tangy flavor – all for a lot less!

Take a breakfast staple and make it into everyone’s favorite breakfast: cake! Don’t forget to add in some of those fresh/dry fruit or nuts you’ve found marked down at the store to add a little flavor and variety!
Ingredients
Dry Ingredients

  • 3 cups quick-cooking oats
  • 1 cup flour
  • 1 cup packed brown sugar
  • 2.5 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
Wet Ingredients

  • 1 tsp vanilla
  • 3 eggs
  • 1 cup milk
  • ½ cup butter, melted
Optional

  • Dried or fresh fruit
  • Nuts
  • Ice cream or whipped cream topping
Instructions
  1. Mix together the dry ingredients in a large mixing bowl
  2. In a separate bowl, mix the wet ingredients until blended well
  3. Slowly stir dry ingredients into the mixed wet ingredients.
  4. Stir in any optional ingredients such as dried/fresh fruit or nuts. We used raspberries that we found deeply discounted and reconstituted dried apples as we had them on hand.
  5. Pour mixture into greased 9×13″ baking pan. Bake at 350 degrees for 40 minutes or until the knife comes out clean.
  6. Cool and optionally top with whipped cream or serve a la mode.

Looks good. I am assuming that the recipe calls for all-purpose flour? If I use self-rising, would I leave out the baking powder?

My Mom used to make an awesome oatmeal cake! It had frosting like the german chocolate cake. It may be more of a dessert, but we used to eat it for breakfast! :)

Hi Cindy – that sounds so good! I love German Chocolate Cake, but it is probably because that yummy frosting. I have pretty much just made this as breakfasts and they are different all of the time due to the add-ins that we include each time.
